3 pounds potatoes, peeled and cubed
3 cups hot water
½ cup fresh lemon juice
⅓ cup vegetable oil
1 tablespoon olive oil
1 ½ teaspoons dried oregano
2 teaspoons salt
½ teaspoon ground black pepper
2 cloves garlic, minced
¼ cup chopped fresh parsley

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • Place the cubed potatoes, water, lemon juice, vegetable oil, and olive oil in a 12x18 inch baking dish or roasting pan. Season with oregano, salt, pepper, and garlic.

1 (8 lb) leg of lamb, bone in
1 head garlic
2 tablespoons Greek oregano
2 tablespoons greek thyme
2 tablespoons dried rosemary
1 cup olive oil
1 cup fresh lemon juice
4 cups dry red wine
salt and pepper
6 -8 cloves garlic, peeled
2 tablespoons oregano
2 tablespoons thyme
2 tablespoons rosemary
1 teaspoon black peppercorns

6 lbs roasting potatoes, peeled and cut lengthwise into six wedges
1 cup olive oil
1 cup lemon juice
water
1 -2 tablespoon oregano

Steps:
