GREEK PENNE PASTA SALAD
I saw this salad in the Deli section at the grocery store for $5.99 a pound. My husband loved it, and I decided to make my own. Since then every family picnic we have I am asked to bring this.

Steps:
- 1. Cook pasta according to package directions until soft, (do not cook el dente) Rinse well with cold water and shake out excess water.
- 2. Combine all other ingredients, adding cheese last. Add 1 bottle of dressing, and mix well. I put down 2 bottles in the ingredients section, because I always add more then 1 bottle. Chill. Prior to serving stir salad well, to mix dressing at the bottom of the bowl.
Tips:
- Choose the right pasta. Penne is a great choice for this salad because it holds the dressing well and is easy to eat. Other good options include farfalle (bow-tie pasta), rotini, and fusilli.
- Use fresh, high-quality ingredients. The fresher your ingredients, the better your salad will taste. Look for ripe tomatoes, crisp cucumbers, and flavorful feta cheese.
- Make your own dressing. The dressing is what really makes this salad special. It's easy to make and only requires a few simple ingredients: olive oil, red wine vinegar, lemon juice, oregano, and salt and pepper.
- Don't overcook the pasta. Al dente pasta is the best choice for this salad. It should be cooked until it is just tender, but still has a slight bite to it.
- Let the salad chill before serving. This will allow the flavors to meld and the pasta to absorb the dressing. For the best results, chill the salad for at least 30 minutes before serving.
Conclusion:
Greek salad penne is a delicious and refreshing pasta salad that is perfect for summer gatherings. It's easy to make and can be tailored to your own taste preferences. With its bright flavors and healthy ingredients, this salad is sure to be a hit at your next party or potluck.
