2 pounds fresh green beans (rinsed and trimmed)
1 (8 ounce) package fresh sliced mushrooms
3 Tablespoons butter
1 onion (diced)
1 Tablespoon fresh parsley (chopped)
2 Tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
1 cup sour cream
1/2 cup shredded cheddar cheese
1 (2.8 ounce) can french fried onions

Steps:

  • Preheat oven to 350 degrees F.
  • Fill a large saucepan with water and bring to a boil over high heat.
  • Add beans to boiling water and let boil for 5 minutes.
  • Drain beans and add mushrooms then set aside.
  • Melt butter in a large skillet over medium heat.
  • Add onion and parsley and cook for a few minutes until onion is tender.
  • Whisk in flour, salt and pepper until well combined then gradually whisk in milk, stirring constantly to avoid lumps.
  • Whisk in sour cream and continue stirring over medium heat until sauce begins to bubble.
  • Fold in green beans and mushrooms until evenly coated.
  • Add half the cheese and fried onions and mix until well combined.
  • Pour green bean mixture into a 9 x 13 inch baking dish sprayed with nonstick cooking spray.

2 lbs fresh green beans, ends cut off
salt
4 slices bacon, cut into 1/4 inch pieces
3 garlic cloves, minced
1 red bell pepper, diced
1/2 large onion, chopped
4 tablespoons butter
4 tablespoons flour
2 1/2 cups whole milk, plus extra for thinning if needed
1/2 cup half-and-half
fresh ground black pepper
1/8 teaspoon cayenne pepper
1 cup sharp cheddar cheese, grated
1 cup panko breadcrumbs

Steps:

  • Preheat the oven to 350 degrees.
  • Cut the green beans in half if you like the pieces to be a little smaller. Blanch the green beans; drop them into lightly salted boiling water and allow the green beans to cook for 3-4 minutes. Remove them from the boiling water with a slotted spoon and immediately plunge into a bowl of ice cold water to stop the cooking process. Drain the beans once they are cool and set aside.
  • Add the bacon pieces to a skillet over medium heat. Cook the bacon for 2 minutes, and then add the peppers, garlic and onions, and continue cooking until the bacon is done (but not crisp) and the onions are golden brown, 3-5 minutes. Remove from heat and set aside.
  • In a separate saucepan, melt the butter over medium heat. Sprinkle the flour into the pan and whisk immediately to evenly mix it into the butter. Cook for a minute or two, and then pour in the milk and half and half. continue cooking, whisking constantly, while the sauce thickens, about 2 minutes. Add 1 1/2 teaspoons salt, some black pepper and the cayenne, and then add the grated cheese. Stir while the cheese melts. Turn off the heat.
  • Add the bacon/onion mixture and stir to combine. Add the green beans and stir gently to combine. Pour into a baking dish and top with the panko. Bake until the sauce is bubbly and the panko is golden, about 30 minutes.

2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
¼ cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.

1 (10 ounce) can condensed cream of mushroom soup
3 ounces processed cheese (i.e. Velveeta®), cubed
1 tablespoon real bacon bits
1 (4 ounce) can mushroom stems and pieces, drained
2 (15 ounce) cans cut green beans, drained
1 (2.8 ounce) can French-fried onions

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat the undiluted cream of mushroom soup in a saucepan over medium heat. Stir in the processed cheese and bacon, and continue stirring until completely melted. Remove from the heat, stir in the mushrooms, then the green beans until evenly coated. Pour the mixture into a casserole dish, and top with the fried onions, leaving a 1 inch margin around the sides.

1/2 cup onion, minced
1/2 teaspoon dried thyme leaves
1 tablespoon dried parsley, minced
2 tablespoons butter
1/2 teaspoon salt

1 cup sour cream
2 tablespoons cooking sherry
20 ounces frozen French-cut green beans
1/2 cup sharp cheddar cheese, grated
