3 large eggs, lightly beaten
1-1/2 cups 2% milk
3/4 cup biscuit/baking mix
1/2 teaspoon salt
1/4 teaspoon pepper

1/4 cup crushed saltines (about 8 crackers)
6 large eggs, lightly beaten
1 medium tomato, seeded and chopped
