Green Beans with Warm Bacon Dressing image

Categories     Side     Sauté     Valentine's Day     Quick & Easy     Vinegar     Bacon     Green Bean     Bon Appétit     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield 2 SERVINGS; CAN BE DOUBLED

Number Of Ingredients 4

1/2 pound green beans, trimmed, cut into 2-inch lengths
2 bacon slices
1 tablespoon chopped shallot
2 teaspoons white wine vinegar

Steps:

  • Cook green beans in large pot of boiling salted water until tender, about 8 minutes. Drain. Transfer to shallow bowl.
  • Meanwhile, cook bacon in medium skillet over medium heat until crisp, about 8 minutes. Drain bacon on paper towel. Add shallot to skillet and sauté 30 seconds. Remove from heat and cool slightly. Stir vinegar into shallot mixture in skillet. Season warm dressing to taste with salt and pepper.
  • Pour dressing over green beans and toss to coat. Crumble bacon over.

Tips:

  • Choose fresh, crisp green beans: Look for beans that are a deep green color and snap easily when bent.
  • Trim the beans: Trim the ends of the beans and remove any strings.
  • Blanch the beans: Blanching the beans will help them retain their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
  • Make the peanut dressing: While the beans are blanching, make the peanut dressing. In a blender or food processor, combine peanut butter, soy sauce, rice vinegar, sesame oil, ginger, garlic, and brown sugar. Blend until smooth and creamy.
  • Toss the beans with the dressing: Once the beans are cool, drain them and pat them dry. Toss the beans with the peanut dressing and serve immediately.

Conclusion:

Green beans with peanut dressing is a delicious and healthy side dish that is perfect for any occasion. The beans are crisp and tender, and the peanut dressing is creamy and flavorful. This dish is sure to be a hit with your family and friends.
