THE SAUCY SENORITAS' SALSA

The Saucy Senoritas' Salsa image

The name alone has you wanting some, doesn't it? The contributors are: Boomette (France) - I suggest adding jalapeno cause I can be spicy sometimes (and HOT!) Evelyn/Athens - I suggest adding mango because I love the tart/sweet element it would add - and that's me basically...ask my students. TheGrumpyChef - I suggest onion, 'cause sometimes I cry for no good reason at all! Galley Wench - I'll add cumin, for "Spicy" Bellinda - You either hate us or love us ('us' being me and garlic) Sue L - cilantro - because when I shower, I always come out fresh and even have a hint of soapiness Slatts - I would like to add a red bell pepper to our salsa because the color reminds me of love and caring. Virginia Cherry Blossom - I am most like lime juice because I have a sweet smell (nice) but I have a tarty taste (honest) - I bring out the best in people and salsa Breezermom - tomato, because I make everything more colorful and bright! Queen Dana - I'm like olive oil because I'm silky and full of good fat.

GREEN SALSA, JALISCO STYLE

Green Salsa, Jalisco Style image

This is a very traditional salsa from the region of Jalisco. It tastes best when the tomatillos are small and tinged with purple. It goes great with any meat or seafood, especially good with carne asada. The yield and number of servings is approximate.

Provided by Mami J

Categories     Vegetable

Time 15m

Yield 1 cup, 6 serving(s)

Number Of Ingredients 5

1/2 lb tomatillo
1/2 small garlic clove
2 -3 dried chilies (chiles de arbol)
1/4 cup water
1 1/2 teaspoons salt

Steps:

  • Peel and rinse the tomatillos. Heat a griddle or a small nonstick skillet over low heat. Add the tomatillos and broil, turning often with a spoon, until the skins are blackened and the tomatillos are very soft, do this over low heat so that they don't burn. They wont all be ready at the same time, so remove the ones that are ready before the rest. Set aside.
  • Add the chiles to the griddle, turning the over constantly, until they darken, again being careful not to burn them.
  • Remove the chiles and put them in a blender with the tomatillos, the garlic, the water and the salt. Puree just until no large pieces remain, it should have some texture. Taste before serving and adjust the salt to your taste. If it comes out too hot you can always add more tomatillos.

Tips:

  • Use ripe tomatillos: Tomatillos are the main ingredient in green salsa, so it's important to use ripe ones. Ripe tomatillos are usually a bright green color and have a slightly sticky texture. Avoid tomatillos that are dull green or have brown spots.
  • Roast the tomatillos: Roasting the tomatillos gives them a smoky flavor and helps to bring out their sweetness. To roast the tomatillos, simply place them on a baking sheet and roast them in a preheated oven at 400 degrees Fahrenheit for 15-20 minutes, or until they are slightly charred.
  • Use fresh cilantro: Cilantro is another key ingredient in green salsa. Be sure to use fresh cilantro, as dried cilantro will not have the same flavor. Chop the cilantro finely before adding it to the salsa.
  • Add some heat: If you like your salsa spicy, you can add some chopped jalapeños or serrano peppers. Start with a small amount and add more to taste.
  • Let the salsa rest: After you make the salsa, let it rest for at least 30 minutes before serving. This will allow the flavors to meld together.

Conclusion:

Green salsa is a delicious and versatile condiment that can be used on a variety of dishes. It's perfect for tacos, burritos, enchiladas, and tostadas. It can also be used as a dipping sauce for chips or vegetables. If you're looking for a quick and easy way to add some flavor to your next meal, give green salsa a try.
