WILTED GREENS WITH GARLIC AND BALSAMIC VINEGAR

Wilted Greens With Garlic and Balsamic Vinegar image

This simple but delicious side dish can be made with almost any kind of green but my personal favourite is red-veined Swiss chard as the green and red make such a pretty presentation. From Williams-Sonoma Italian Favourites.

Provided by Irmgard

Categories     Chard

Time 15m

Yield 6 serving(s)

Number Of Ingredients 7

10 cups swiss chard (or use your own personal favourite)
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
2 garlic cloves, minced
1 pinch red pepper flakes
salt
black pepper

Steps:

  • Cut the greens into strips 1 inch wide.
  • In a large saute pan over medium-high heat, warm the olive oil.
  • Add the greens and using tongs, toss them until they are wilted but still retain their bright colour, about 3-4 minutes.
  • Add the vinegar, garlic, red pepper flakes, salt and black pepper to taste and toss well.
  • Transfer to a warmed serving bowl and serve immediately.

Tips:

  • Choose the right greens: This recipe is versatile and can be made with a variety of greens, such as spinach, kale, arugula, or a mix of your favorites. Choose greens that are fresh and crisp, with no signs of wilting or browning.
  • Make sure the greens are dry: Before adding the greens to the salad, make sure they are thoroughly dried. This will help prevent the salad from getting watery.
  • Use a good quality balsamic vinegar: The balsamic vinegar is the star of this dressing, so it's important to use a good quality vinegar that has a rich, complex flavor. Look for a vinegar that is aged for at least 12 years.
  • Whisk the dressing until it is emulsified: When you whisk the dressing, the oil and vinegar will come together to form an emulsion. This will help the dressing cling to the greens and prevent it from separating.
  • Season the salad to taste: Once you've added the dressing to the salad, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or balsamic vinegar, depending on your personal preference.

Conclusion:

This simple yet flavorful green salad is perfect for a light lunch or dinner. The balsamic vinaigrette dressing is the star of the show, and it's sure to impress your friends and family. With its combination of fresh greens, tangy dressing, and salty cheese, this salad is sure to be a hit.
