- Combine onion powder, salt, smoked paprika, cumin, cayenne pepper, garlic powder, oregano, thyme, and brown sugar in a small resealable plastic bag and shake the bag to mix the spices. Pour spice mix into a small bowl.
- Make 2 cuts in the chicken skin, on front and back of chicken; insert your hand underneath the skin in front and back and loosen and separate skin without tearing it. - Rinse the chicken and pat dry. Toss the ginger with 2 tablespoons salt and 1 teaspoon pepper. Sprinkle half of the mixture on the chicken; reserve the rest. Refrigerate the chicken, uncovered, at least 2 hours.

- To make brine, in 3-quart saucepan, mix salt, sugar and chili powder. Stir in 1 1/2 cups of the water. Heat to boiling over medium heat, stirring frequently. - Preheat grill for high heat.
- In a microwave-safe bowl, combine the beer, butter, 1 tablespoon garlic powder and seasoned pepper. Heat in the microwave for 2 minutes, or until butter is melted and mixture is hot. Set aside.
- Season chicken generously with the garlic powder, ground black pepper and seasoned salt to taste.
- Brush the grilling surface with oil. Place chicken onto the grill bone side down. Close the lid, and cook for about 45 minutes, or until the chicken skin is starting to blister.
- Turn the chicken over, so it is bone side up. They will be black and charred, but the chicken meat will be fine. Pierce the membrane of the bone with a fork, and ladle some of the beer mixture into the 'cup' formed by the bones. - 1. Spray inside of disposable aluminum pan. Clean, wash and pat dry your favorite chicken pieces (I used thighs). Sprinkle chicken with your choice of seasonings.
- 2. Place chicken pieces, skin side up, into prepared pan and do not cover. Place on grill and pour beer into pan. You be the judge on whether to use one or two bottles of beer. It depends on how much chicken you have in the pan. Don't pour directly over chicken but around the pieces. Make sure the beer doesn't cover the meat. Put grill lid down and cook (about 350 degrees) until chicken is done and very tender.
- 3. The skin will be crispy on top. The beer & seasonings will make such a nice sauce and no, you can't taste the beer.
