A delicious sandwich for special occasions or even just a nice evening in! Note: in order to reduce the fat content, you can toast the bread first and then bake this in the oven at 350 F. for about 20 minutes or until the cheese is melted.

1 tbsp. water
3 tbsp. maple syrup
8 oz. fresh blackberries
4 slices whole grain bread
8 oz. cheese ((1 oz. slices))

Steps:

  • Wash your blackberries and pat dry.
  • Place the blackberries, maple syrup and water into a small pot and bring to a boil.
  • Mash the blackberries with a potato masher or fork.
  • Turn down heat to a simmer and cook until almost all the liquid has cooked down. You should be left with something similar to a very chunky jam when it has cooled a bit.
  • Using either oil or vegan butter, grease the outside area of your sandwich slices.
  • Place one piece of bread, greased side down, in a skillet.
  • Place 4 slices of cheese on the break, breaking it up as needed to get it to fit properly.
  • Place the second slice of bread over that and turn the heat to medium.
  • Once everything is cooking nicely, turn the heat down to a medium-low and cover the skillet for about 3-5 minutes. Keep an eye on things so the bread doesn't burn.
  • Flip sandwich as needed for cooking.
  • Once the cheese has melted, transfer sandwich to a plate.
  • When the bread is cool enough to handle with your fingers, remove the top slice of bread from the sandwich and spoon on the blackberry mixture.
  • Place the bread back on top and serve.

3 tablespoons mayonnaise
1/8 teaspoon onion powder
4 ounces Brie cheese, sliced, rind removed
1 cup fresh blackberries

  • Spread half the butter over one side of bread slices. In a large skillet, toast bread, buttered side down, over medium-low heat until golden brown, 2-3 minutes., In a small bowl, combine cheddar, Monterey Jack and Gruyere cheeses. In another bowl, combine Manchego cheese, mayonnaise, remaining 3 tablespoons butter and onion powder., On four slices of toast, layer Brie cheese, cheddar cheese mixture and blackberries. 12 ounces brioche bread, cut into 3/4-inch cubes
1 pint blackberries, halved
4 ounces cream cheese, chilled and diced
aluminum foil (such as Reynolds Wrap®)
1 tablespoon unsalted butter, melted

  • Preheat an outdoor grill for medium-high heat, approximately 375 degrees F (190 degrees C).

2 slices bread
2 tablespoons cream cheese, softened
2 chopped scallions
2 slices pork or 2 slices turkey
1/2 sliced apple
2 teaspoons strawberry preserves

We use different jams and jellies, and replace the cream cheese with peanut butter for the kids (and sometimes Grandpa).

1 tablespoon blackberry jam
1 teaspoon blackberry jam
1 tablespoon cream cheese, softened
1 teaspoon cream cheese, softened
1 tablespoon mayonnaise
1 teaspoon mayonnaise
2 slices homemade bread (thinly sliced)

Steps:

  • Place fry pan or griddle on medium heat.
