GRILLED ZUCCHINI AND FETA TOASTS

Grilled Zucchini and Feta Toasts image

Though its flavor is subtle, zucchini absorbs seasonings readily, and develops deep complexity when grilled. In this recipe, the grilled squash is doused with a flavorful oil made with garlic, cumin and coriander. If you have extra time, marinate the grilled zucchini pieces in the spice oil for up to 24 hours to help build flavor. You can serve the dish hot off the grill, or prepare in advance, then serve at room temperature.

Time 30m

Yield 2 to 4 servings

Number Of Ingredients 11

4 medium zucchini (about 1 pound), trimmed and halved lengthwise
1/2 cup olive oil
Kosher salt and black pepper
4 thick slices country or sourdough bread
4 garlic cloves, thinly sliced
1 teaspoon cumin seeds, lightly crushed
1 teaspoon coriander seeds, lightly crushed
1 teaspoon red-pepper flakes
Grilled bread, for serving
3 ounces feta, crumbled into large pieces
Lemon wedges, for serving

Steps:

  • Heat a grill or grill pan over medium-high and brush the grates clean, if grilling outdoors.
  • With a small spoon, scrape the seeds from the middle of zucchini halves and discard. Rub zucchini with 2 tablespoons olive oil and season with salt and pepper. Place zucchini halves onto grill, cut-sides down, and cook until charred on both sides, turning halfway through, 10 to 15 minutes. Transfer grilled zucchini onto a cutting board, let cool slightly then cut into bite-size pieces.
  • While zucchini grills, brush bread on both sides with 2 tablespoons olive oil. Grill until lightly charred on both sides, about 5 minutes. Transfer to a serving platter.
  • While zucchini and bread grill, prepare the spice oil: Heat remaining 1/4 cup oil in a small saucepan over medium-low until hot. Stir in the garlic, cumin seeds, coriander seeds and red-pepper flakes, and remove from heat. The residual heat from the oil will cook the garlic and spices. Transfer spice oil to a large bowl, add grilled zucchini and toss to combine.
  • Spoon zucchini over grilled bread and top with large pieces of feta. Serve with lemon wedges for squeezing on top.

GRILLED ZUCCHINI BREAD WITH MASCARPONE AND BERRIES

Grilled Zucchini Bread with Mascarpone and Berries image

Grill your zucchini bread for a summer dessert, topped with fresh berries.

Provided by Kristin Donnelly

Time 15m

Yield 4 to 8 Servings

Number Of Ingredients 6

Vegetable oil, for grilling
One 9-inch storebought or homemade zucchini bread, cut into 8 slices
Sugar, for sprinkling
1 cup mascarpone cheese
1/2 pint raspberries
1/2 pint blueberries

Steps:

  • Light a grill or preheat a grill pan and oil the grates. Lightly brush both sides of the zucchini bread slices with oil, sprinkle with sugar, and grill over moderately high heat, turning once, until dark brown grill marks form on both sides, about 2 minutes per side.
  • Transfer the zucchini bread to plates and top with a dollop or two of mascarpone. Spoon the berries on top and serve.

Tips:

  • Choose the right zucchini: Look for medium-sized zucchini that are firm and have a deep green color. Avoid zucchini that are too large or have blemishes.
  • Slice the zucchini evenly: This will help them cook evenly. Use a sharp knife to cut the zucchini into 1-inch thick wedges.
  • Season the zucchini: Before breading, season the zucchini with salt, pepper, and any other desired spices. This will help enhance their flavor.
  • Use a light hand with the breading: Too much breading can make the zucchini greasy and heavy. Dip the zucchini wedges in the egg wash, then coat them with the breadcrumb mixture. Press the breadcrumb mixture gently to help it adhere.
  • Cook the zucchini over medium heat: This will help prevent them from burning. Cook the zucchini for 3-4 minutes per side, or until they are golden brown and tender.
  • Serve the zucchini hot: Grilled breaded zucchini is best served immediately, while it is still hot and crispy. You can serve it with a variety of dipping sauces, such as ranch dressing, marinara sauce, or tzatziki sauce.

Conclusion:

Grilled breaded zucchini is a delicious and easy-to-make appetizer or side dish. It is perfect for summer cookouts and potlucks. With its crispy breading and tender zucchini, this dish is sure to be a hit with everyone who tries it. So next time you are looking for a new way to enjoy zucchini, give this recipe a try.
