Scampi Butter, recipe follows
2 tablespoons finely chopped fresh cilantro leaves
1/4 pound unsalted butter, softened
1 tablespoon minced garlic
2 tablespoons minced red onion
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Dash white pepper
Dash Worcestershire sauce
1 lemon, juiced
1 tablespoon white wine

Steps:

  • Preheat a grill or grill pan over high heat.
  • Lightly coat chicken with oil and sprinkle each evenly on both sides with the salt and pepper. 1 1/4 pounds boneless chicken breast halves with skin
6 tablespoons extra-virgin olive oil, divided
2 1/2 teaspoons minced fresh oregano
3 teaspoons finely grated lemon peel, divided
2 garlic cloves, pressed
Freshly ground black pepper
1 1/2 pounds large carrots, peeled, cut on deep diagonal into 1/4- to 1/3-inch-thick slices
3/4 teaspoon minced canned chipotle chiles*
Coarse kosher salt
2 tablespoons fresh lemon juice, divided

1/4 cup chopped fresh cilantro
4 ounces feta cheese, coarsely crumbled

  • Place chicken between 2 sheets of plastic wrap; pound with meat mallet to 1/2- to 3/4-inch thickness. Place chicken in 11 x 7 x 2-inch glass baking dish. Drizzle with 4 tablespoons olive oil. 1/4 cup plus 1 tablespoon extra-virgin olive oil, plus more for the grill
2 teaspoons harissa
1 teaspoon ground cumin

1 Japanese eggplant, sliced
3/4 cup cooked bulgur
1 plum tomato, diced
1/2 cup crumbled feta
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh mint

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.

¼ cup red wine vinegar
2 teaspoons kosher salt

1/4 cup mayonnaise

8 (6 inch) corn tortillas
2 cups grated monterey jack cheese
