Roast Chicken With Tomato-Olive Sauce image

I adopted this recipe. For my trial run of the recipe, I prepared the chicken using the roasting method in Recipe #67470. It was an incredibly moist and flavorful bird. The Tomato-Olive sauce is bright with fresh flavors and the perfect salty compliment. This is simple and fabulous. The recipe can be done with grilled breasts or thighs as well. Make and share this Grilled Chicken Breasts With Heirloom Tomatoes recipe from Food.com.

Provided by MarraMamba

Categories     Chicken

Time 1h5m

Yield 6-8 serving(s)

Number Of Ingredients 8

4 chicken breasts (about 1/2 pound each)
3 small heirloom tomatoes (try to get different colors (red, purple, yellow, green...)
1 small red onion
1 bunch of fresh mint
1 lemon
2 garlic cloves
2 tablespoons olive oil
salt and pepper

Steps:

  • Plunge the tomatoes in boiling water for 1 minute to help make peeling easier. Remove the skin, cut in quarters and remove the seeds. Cut in small cubes, reserve.
  • Cut the red onion in small dices, add to the tomato dices.
  • Remove the leaves from the mint.
  • Crush the garlic cloves, grate and squeeze the lemon. Chop the mint leaves; mix with the olive oil, garlic, fresh pepper, salt, lemon juice and lemon zest. Pour half of the mixture over the chicken and half over the tomatoes and red onion. Let the meat and the tomatoes marinate for at least 30 minutes.
  • When ready to cook, place the chicken on a hot grill for 1 to 2 minutes per side to get nice markings on the breasts. Remove from the grill and put on a small sheet pan. Pour any remaining marinade over the chicken.
  • Place in a 350°F oven for 7 to 10 minutes, depending on the thickness of the breast.
  • Once the chicken is cooked, allow the meat to rest for about five minutes. Mix the chicken's cooking juices with the tomatoes. Slice the chicken and place on a plate, cover with the marinated tomatoes and drizzle remaining tomato marinade over all. Serve with mint-infused couscous.

Tips:

  • Choose the right chicken breasts: Look for boneless, skinless chicken breasts that are about the same size so they cook evenly.
  • Marinate the chicken: Marinating the chicken in a flavorful mixture of olive oil, herbs, and spices will help to keep it moist and tender during grilling.
  • Grill the chicken over medium heat: This will help to prevent the chicken from drying out.
  • Use a meat thermometer to check the internal temperature of the chicken: The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: This will allow the juices to redistribute throughout the chicken, resulting in a more tender and flavorful dish.
  • Make the fire-roasted tomato sauce ahead of time: This will allow the flavors to meld and develop.
  • Roast the zucchini with oregano and lemon: This is a simple but delicious way to cook zucchini.
  • Serve the grilled chicken with the fire-roasted tomato sauce and roasted zucchini: This is a delicious and healthy meal that is perfect for a weeknight dinner.

Conclusion:

This recipe for grilled chicken breasts with fire-roasted tomato sauce and roasted zucchini is a delicious and healthy meal that is perfect for a weeknight dinner. The chicken is marinated in a flavorful mixture of olive oil, herbs, and spices, then grilled over medium heat until cooked through.
