Pimento Olive Cheese Sandwiches with Tomato image

I came up with this because of a craving for pimento cheese spread. I didn't have any pimentos, but I did have Spanish olives stuffed with pimentos...yummmm! I can't help but play with my food so I added a little "horsey" mayo and garlic. Then a slice of garden fresh tomato and spicy bread and butter pickles. This is terrific...

3 c sharp cheddar cheese grated
1/4 c mayonnaise
1/4 c sandwich pal horseradish sauce
8 spanish olives, sliced
1/8 garlic powder or more to taste
fresh ground pepper to taste
1 tomato sliced
8 slice bread
bread and butter pickles ( i always eat a few and put sliced jalapenos in the jar - gives them a spicy kick)

Steps:

  • 1. In a large bowl mix the grated cheddar with mayo and horsey sauce. Add olives and spices. Stir to combine.
  • 2. To assemble spread cheese mixture on 4 slices of bread. Top with tomato and bread and butter pickle slices. Top with bread.
  • 3. If you want to try the cheese spread grilled just omit the tomato and bread and butter pickles. Spread outside of sandwich with butter and grill in a skillet until golden and cheese is melted.
