Steps:
- Melt butter in small saucepan over medium heat. Add minced chipotles, fresh lime juice, and 1/4 teaspoon salt. Reduce heat to low and cook chipotle butter 1 minute to blend flavors.
- Place ears of corn on baking sheet. Brush corn all over with chipotle butter. (Can be prepared 4 hours ahead. Cover corn and refrigerate.)
- Prepare barbecue (medium-high heat). Grill corn until cooked through and blackened in spots, turning frequently, about 6 minutes. Serve corn with lime wedges.
- Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.
Tips:
- Choose fresh corn on the cob: Look for ears with tightly packed kernels and bright green husks.
- Remove the husks and silks: Peel back the husks and remove the silks. Leave about an inch of husk at the top of the corn to protect the kernels.
- Soak the corn in water: Soaking the corn in water for 30 minutes before grilling helps to prevent the kernels from drying out.
- Grill the corn over medium-high heat: Preheat your grill to medium-high heat. Place the corn on the grill and cook for 10-12 minutes, turning every few minutes.
- Brush the corn with melted butter: Once the corn is cooked, brush it with melted butter and sprinkle with salt and pepper.
- Serve the corn immediately: Grilled corn on the cob is best served hot off the grill.
Conclusion:
Grilled corn on the cob is a classic summer side dish that is easy to make and always a crowd-pleaser. With its smoky flavor and sweet, juicy kernels, it's the perfect addition to any backyard barbecue or picnic.
