GRILLED MAHI-MAHI WITH MOJO

Grilled Mahi-Mahi with Mojo image

Provided by Food Network Kitchen

Categories     main-dish

Time 17m

Yield 2 servings

Number Of Ingredients 9

2 cloves garlic, chopped
2 tablespoons extra-virgin olive oil, plus extra for brushing
1/4 cup freshly squeezed lime juice (about 2 limes)
1/2 teaspoon kosher salt
2 tablespoons chopped fresh cilantro leaves plus 2 sprigs for garnish
Two 5- to 6-ounce mahi-mahi fillets
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
Mixed greens, for serving

Steps:

  • Put the garlic and olive in a small microwave-safe bowl, cover with plastic, and microwave on HIGH until the garlic is soft and aromatic, 1 to 2 minutes. (Alternatively, heat the oil and garlic in a small saucepan over medium heat until the garlic is softened.) Stir in the lime juice, cilantro leaves, and salt. Set aside until ready to serve.
  • Prepare an outdoor grill to medium high heat. Brush the fillets all over with olive oil and season generously with salt and pepper. Lay the fish on the grill, rounded-side down, and leave it until you can lift the fish without it sticking to the grill and there are distinct grill marks, about 5 minutes. (Test it by gently lifting a corner--if it sticks, cook it a bit longer and try again). Carefully turn the fish over and cook until firm to the touch, about another 5 minutes.
  • Place a bed of greens on 2 plates. Divide the fish between the plates and brush with some of the mojo. Garnish with cilantro sprigs and serve with the sauce.

GRILLED MAHI MAHI

Grilled Mahi Mahi image

This recipe is great either on the grill or in the oven broiler. The tomatoes give it a little bite. My entire family loves it, even my pickiest eater. In the winter I make this dish in my oven or broiler. The amounts I gave are approximate. I use two cans of tomatoes when I want more 'bite,' only one can when I want less. I like a lot of garlic so I generally use a lot.

GRILLED MAHI-MAHI, CEVICHE-STYLE

Grilled Mahi-Mahi, Ceviche-Style image

Provided by Alton Brown

Categories     main-dish

Time 2h18m

Yield 4 servings

Number Of Ingredients 10

4 skinless mahi-mahi fillets, approximately 2 pounds
2 teaspoons kosher salt
1/2 cup diced red onion
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed orange juice
1 tablespoon minced jalapeno
1/4 cup dark brown sugar, packed
1/4 cup tequila
1 tablespoon olive oil
1/4 cup freshly chopped cilantro leaves

Steps:

  • Rub the fillets with kosher salt and set aside. In a non-reactive bowl, combine the onion, lime juice, orange juice, jalapeno, sugar and tequila. Mix to dissolve the sugar, and add the fillets to the bowl. Marinate in the refrigerator for 2 hours, turning the fillets once after 1 hour. Remove the fillets from the marinade and set it aside. Pat the fillets dry with paper towels and lightly coat with the olive oil.
  • Heat a grill to high and place the fillets over direct heat until they are just cooked through - opaque at the center but still moist, approximately 3 to 4 minutes per side. While the fish is grilling, transfer the reserved marinade to a saucepan and heat until it is reduced to about 3/4 cup. Using tongs, remove the fillets to serving plates and divide sauce equally among them. Top with the cilantro.

GRILLED MAHI MAHI WITH GARLIC SESAME SAUCE

Grilled Mahi Mahi With Garlic Sesame Sauce image

This is one of those that just came out of the things in my kitchen. But when it came together, we all said, "WOW! that's good."

Provided by Ru4given

Categories     Mahi Mahi

Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

4 mahi mahi fillets
1 red bell pepper, thinly sliced
1 large zucchini, thinly sliced
green onion, thinly sliced
2 garlic cloves, minced
1/2 cup pineapple juice
3 tablespoons soy sauce
1 tablespoon sesame oil
1 cup dry sherry
1 tablespoon cornstarch (to be added to the sauce only)

Steps:

  • Use a small portion of the sauce mixture to marinate the fish fillets for 1/2 hour.
  • Prepare the remaining sauce by adding cornstarch to marinade and bring to a boil until thick, stirring frequently.
  • Sear the marinated fish fillets on hot grill for 1 to 2 minutes per side.
  • Prepare 4 aluminum "envelopes" by placing 1 fillet on top of layered bell pepper and zucchini.
  • Top with garlic, green onion and sesame seeds.
  • Salt and pepper to taste.
  • Seal package and grill on the bottom side for 5 minutes and on the top side for 3-4 minutes.
  • Serving Suggestion: Excellent served over white jasmine rice.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and tools ready to go. This will help you stay organized and prevent any mishaps.
  • Choose Fresh Fish: Always use the freshest fish possible for the best results. Look for fish that is firm to the touch and has a mild, briny smell.
  • Properly Clean and Prepare the Fish: Before cooking, rinse the fish thoroughly under cold water and pat it dry with paper towels. Remove any bones or scales if necessary.
  • Marinate the Fish: Marinating the fish in a flavorful mixture of herbs, spices, and oil helps to enhance its taste and tenderness. You can marinate the fish for as little as 30 minutes or up to overnight.
  • Use Direct and Indirect Heat: When cooking fish on a grill, use both direct and indirect heat. Direct heat will sear the fish and give it a nice crust, while indirect heat will help to cook the fish evenly without overcooking it.
  • Flip the Fish Carefully: To prevent the fish from sticking to the grill grates, carefully flip it only once during cooking. Use a fish spatula to gently lift the fish and avoid breaking it.
  • Cook to the Proper Temperature: To ensure that the fish is cooked safely and properly, use a meat thermometer to check its internal temperature. The internal temperature of cooked fish should be between 145°F and 155°F.

Conclusion:

Grilled cumin-scented mahi-mahi is a delicious and healthy way to enjoy this versatile fish. By following these tips and using the provided recipe, you can easily create a flavorful and impressive meal that is perfect for any occasion. Serve the grilled mahi-mahi with your favorite sides, such as rice, grilled vegetables, or a fresh salad, for a complete and satisfying meal.
