1 scallion, white and light green parts only, finely chopped

2 teaspoons Neely's BBQ seasoning
1 teaspoon grated orange zest
1/4 teaspoon kosher salt, plus more as needed
1/4 teaspoon cayenne pepper
6 (6-ounce) halibut fillets, about 1-inch thick
Extra-virgin olive oil, for brushing
Freshly cracked black pepper
2 pounds asparagus, trimmed

Steps:

  • Seasoning:
  • Stir the paprika, sugar and onion powder together in a bowl and set aside.
  • Halibut:
  • In a small bowl, using a rubber spatula, combine the oregano, scallions, butter, barbeque seasoning, orange zest, 1/4 teaspoon salt and cayenne pepper. Spoon the seasoned butter onto a piece of plastic wrap. Using the plastic wrap as a shield for your hands, shape the butter into a log, wrapping it in the plastic, and refrigerate for at least 30 minutes.

1 cup hazelnuts, (toasted and finely-chopped)
3/4 cup fine bread crumbs, (divided*)
1 tablespoon parsley (leaves, fresh, minced)
1/8 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon orange zest, (grated)
2 teaspoons dry vermouth
2 tablespoons milk
4 halibut (filets (about 1-inch thick))
2 tablespoons butter, (melted)
1/4 cup dry white wine
Lemon (wedges)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 10x15-inch baking dish.
  • In a medium bowl, add 1 egg white; beat lightly. Stir together the chopped hazelnuts, 1 tablespoon bread crumbs, parsley, pepper, salt, orange zest, and vermouth; set aside.
  • Place remaining bread crumbs on a large plate suitable for dredging. In a shallow pan or pie plate, lightly beat remaining egg whites and milk together. Place halibut filets, one at a time, into egg whites to coat well, then press each side of the filets into bread crumb mixture to coat well.
  • Lay prepared filets well apart on the prepared baking dish; crumble the hazelnut mixture over the top of each.
  • In a small bowl, combine melted butter and white wine; drizzle over top of the filets.
  • Preheat your barbecue grill.
  • Cover barbecue with lid, open any vents, and grill the prepared halibut 8 to 12 minutes, uncovered, or until a meat thermometer registers an internal temperature of 140 degrees F (halibut will be slightly opaque in thickest part). Remember the halibut continues to cook after it is removed from the heat source.

This is my original recipe. It is so easy you won't believe how good it is. Beautiful white halibut, lightly smoky from the BBQ, with a sauce of red currant jelly and garlic. Feel free to add a bit of finly chopped jalapino if more heat is your taste. If you can't find red currant jelly, seedless red raspberry works well, but will be sweeter. You can easilly substitute Orange Roughy. Cod is much cheaper, and will work, but use a fish basket to grill it, as it will fall apart.

24 ounces halibut fillets, cut into 4 6 Oz servings
2 tablespoons extra virgin olive oil
1/2 cup red currant jelly
4 garlic cloves, sliced thinly, not chopped
1/2 teaspoon jalapeno pepper, finely chopped

  • Prepare BBQ. Preheat if using a gas BBQ. Or prepare charcoal with some mesquite chunks.
  • Place jelly, garlic slices, and jalapino if desired, into a microwave safe cup. Microwave 30 sec, leave in microwave.

1 pound red potatoes, cut into chunks
5 cloves garlic, minced
½ teaspoon salt

2 halibut fillets
¼ teaspoon salt
1 tablespoon olive oil
1 tablespoon butter

Steps:

  • Place the potatoes into a large pot, and cover with water. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. While the potatoes are boiling, mash the garlic with 1/2 teaspoon of salt into a smooth paste. Drain potatoes, then mash together with the garlic paste, butter, and pepper. Keep warm.
  • Preheat an oven to 500 degrees F (260 degrees C).
  • While the potatoes are cooking, Preheat an oven to 500 degrees F (260 degrees C). Pulse the hazelnuts and bread crumbs in a food processor until finely ground, but not ground into a paste. Pour onto a shallow dish. Season the halibut fillets on both sides with 1/4 teaspoon of salt. Gently press one side of the halibut fillets into the nut mixture, and set aside.
  • Heat the olive oil and 1 tablespoon of butter in an ovenproof skillet over medium-high heat. Place the halibut fillets nut-side-up into the skillet; cook until the halibut begins to brown, 3 to 4 minutes. Turn the fillets over, and place into the preheated oven. Bake, nut-side-down until the fish flakes easily with a fork, about 5 minutes.
  • Melt the remaining 5 tablespoons of butter in a small saucepan over medium-high heat until it turns nut brown. Stir in the vegetable broth, and bring to a simmer.
  • To serve, mound the potatoes onto the center of each dinner plate. Place a halibut fillet on top of the mashed potatoes nut-side-up, then drizzle with the browned butter sauce.
