1 lb. Eckrich Black Forest Ham
4 large slices sourdough bread
1 cup grated Havarti
1 tablespoon butter
2 cups grated gruyere
1/2 cup mayonnaise
1/2 cup chopped up pickles
1/4 cup chili garlic sauce
1 chopped up garlic cloves
1 teaspoon Worcestershire
1 teaspoon lemon juice
1/2 teaspoon onion powder
pepper to taste

Steps:

  • Toss all the ingredients, except the shredded cheese and pickles, into a food processor and process until it's a creamy sauce.
  • Add the pickles and shredded cheese to the processor. Pulse the mixture until the cheese and pickles are incorporated into the sauce. Set aside.
  • Butter one side of each piece of bread and roll up the ham. Why roll the ham? This gives the cheese a chance to melt in between all of the delicious Eckrich Black Forest Ham slices.
  • Spread a layer of the savory pickle and cheese spread on the opposite sides of the buttered bread slices. Lay out a couple of layers of the rolled ham onto 1 slice of the bread with the cheese spread on it. Spread a bit more of the cheese spread over the ham rolls, and top it with another slice of bread (cheese spread side toward the ham).
  • Heat up a non-stick pan to medium heat. Grill each side of the sandwich. You're looking for a nice brown color on the bread. Remove the sandwich from the heat.
  • Sprinkle the grated Havarti onto the heated pan (make sure the cheese is the size of one piece of bread). Keep a close eye on the cheese so it doesn't burn. You'll want the bottom of the cheese to be a very light brown on the bottom. When the cheese reaches that point, place the sandwich on top of the cheese and grill until the cheese crisps up and adheres to your sandwich.
  • Remove from heat and enjoy!

3 ounces thinly sliced prosciutto
6 tablespoons (3/4 stick) unsalted butter

Steps:

  • Smear both sides of bread slices with mayonnaise. Combine cheeses in a bowl. Sprinkle 4 slices bread with half of cheese mixture, dividing equally. Top each with 3-4 pickles. Divide prosciutto among sandwiches; top with remaining cheese. Cover with remaining bread.

6 slices firm, thinly sliced close-textured bread, such as Pepperidge Farm
3 tablespoons sweet butter, softened
3 thin slices honey-cured ham
1/4 pound sliced Gruyere cheese, white cheddar, or Swiss

Steps:

  • To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
  • Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
  • Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

½ cup shredded extra-sharp Cheddar cheese
¼ cup shredded Swiss cheese
1 tablespoon butter
2 slices white bread
2 thin slices ham

Steps:

  • Mix the shredded cheeses together in a small bowl.
  • Melt butter in the bottom of a fry pan over medium heat. Add one slice of bread. Top the piece of bread with about 1/2 of the cheese mixture and the ham slices. Top with the second piece of bread.
