2 large egg yolks
1 tablespoon lemon zest

4 cups all-purpose flour

3 cups powdered sugar, plus more if needed
2 tablespoons cream of coconut

Juice of 1 lemon, plus more if needed
Juice of 1 lime, plus more if needed

Steps:

  • For the cookies: Preheat the oven to 350 degrees F.
  • Using a hand or stand mixer, cream the butter and granulated sugar until combined. Add the egg yolks and mix until combined. Add the lemon and lime zest. Whisk thoroughly until combined, adding either more powdered sugar or more juice until it reaches a pourable but still thick consistency.

Yield Makes about 50

Number Of Ingredients 8

2 sticks (1 cup) unsalted butter, room temperature
2/3 cup confectioners' sugar, sifted
2 large egg yolks, room temperature
1 teaspoon salt
2 teaspoons pure vanilla extract
Grated zest of 1 to 1 1/2 lemons
2 cups all-purpose flour
Approximately 1/2 cup granulated sugar, for coating

Steps:

  • Place the butter in the bowl of an electric mixer fitted with the paddle attachment and beat on medium until smooth. Add the confectioners' sugar and beat until smooth and silky. Beat in 1 egg yolk, then the salt, vanilla, and lemon zest. Reduce mixer speed to low and add the flour, beating just until incorporated. Do not over-beat. Turn the dough out onto a work surface. Divide dough in two and wrap each piece in plastic wrap. Refrigerate for 30 minutes.
  • Working on a smooth surface, form each piece of dough into a log 1 to 1 1 /4 inches in diameter. Wrap logs in plastic wrap and refrigerate for 2 hours. Can be prepared up to this point and kept, well wrapped in the refrigerator for up to 3 days or frozen for up to 1 month.
  • Place one rack in the upper third and one in the lower third of the oven. Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside.
  • Whisk the remaining egg yolk in a small bowl until smooth. Spread sugar out on a piece of wax paper. Remove the logs from refrigerator, unwrap, and brush lightly with the egg yolk. Roll logs in the sugar, pressing to adhere. Slice crosswise 1/4-inch-thick using a sharp knife. Place on prepared baking sheet, leaving about 1/2-inch between cookies.
  • Bake until set but not brown, 12 to 14 minutes. Transfer cookies to cooling rack until room temperature. Will keep stored in an airtight container, at room temperature, for up to 5 days.

The Pioneer Woman's Coconut-Lime Butter Cookies Recipe - (3.5/5) image

Provided by lindaauman

Number Of Ingredients 20

COOKIES:
4 sticks (1-pound) salted butter, softened
1 1/2 cups granulated sugar
2 large egg yolks
1 tablespoon lemon zest
1 tablespoon lime zest
4 cups all-purpose flour
2 tablespoons lemon or lime juice (or 1 tablespoon of each)
1/2 teaspoon coconut extract
ICING:
3 cups powdered sugar, plus more if needed
2 tablespoons cream of coconut
1 tablespoon lemon zest, plus extra for decorating
1 tablespoon lime zest, plus extra for decorating
1 tablespoon milk
1 teaspoon coconut extract
dash of salt
1 large egg white
juice of 1 lemon, plus more if needed
juice of 1 lime, plus more if needed

Steps:

  • COOKIES: Preheat the oven to 350°F. Using a hand or stand mixer, cream the butter and granulated sugar until combined. Add the egg yolks and mix until combined. Add the lemon and lime zest. Add the flour and mix until just combined. Next, add the citrus juice and coconut extract, and mix the dough until it comes together. Scoop out tablespoons of dough, roll into balls between your hands and place on a baking sheet. Bake until not quite starting to turn brown, 12 to 13 minutes. Remove from the oven but keep the cookies on the baking sheet for 3 to 4 minutes. Use a spatula to move them to a cooling rack to cool completely. ICING: Add the powdered sugar, cream of coconut, lemon, and lime zest, milk, coconut extract, salt, egg white, and lemon and lime juice to a large bowl. Whisk thoroughly until combined, adding either more powdered sugar or more juice until it reaches a pourable but still thick consistency. Drizzle the icing across the cookies in several lines, and then repeat in the other direction. Sprinkle the cookies with extra zest before the icing sets.

Tips:

  • Use unsalted butter at room temperature: This will help the cookies spread and bake evenly.
  • Cream the butter and sugar together until light and fluffy: This will help incorporate air into the cookies, making them light and tender.
  • Add the eggs one at a time, beating well after each addition: This will help prevent the cookies from becoming tough.
  • Stir in the dry ingredients gradually: This will help prevent the cookies from becoming dry or crumbly.
  • Chill the dough for at least 30 minutes before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at 350 degrees Fahrenheit for 10-12 minutes, or until the edges are just beginning to brown: Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely: This will help prevent the cookies from breaking.

Conclusion:

With their bright citrus flavor and soft, chewy texture, Lemon Lime Butter Cookies are a delicious and refreshing treat that is perfect for any occasion. By following the tips above, you can easily make these cookies at home and enjoy them with your family and friends.
