GRILLED ROSEMARY GARLIC SHRIMP

I believe this is a variation of a recipe from Gourmet. It's an awesome dish that can be used as an appetizer OR main course. The key is using fresh rosemary and lots of garlic. You can increase the amount of garlic if you wish. The only negative is peeling the shrimp which can be a bit messy but it is worth it!

Yield 4 serving(s)

Number Of Ingredients 6

1/4 cup chopped garlic, mashed to a paste with
1 teaspoon coarse salt
2 tablespoons minced fresh rosemary leaves, plus sprigs for garnish
3 tablespoons olive oil, plus oil for brushing shrimp
16 jumbo shrimp (about 10 per pound)
four 12 inch bamboo skewer

Steps:

  • In a large bowl stir together garlic, minced rosemary, and 3 TBSP olive oil and add shrimp.
  • Marinate shrimp (with shells on), covered and chilled, at least 4 hours or overnight.
  • Soak skewers in water for 30 minutes.
  • To grill, put 4 shrimp on each skewer and brush with additional oil.
  • Grill shrimp (with shells on) 3 to 4 minutes on each side, or until just cooked through.
  • Garnish shrimp with rosemary sprigs if desired.

Tips:

  • Choose the right shrimp: Large shrimp (21-25 count per pound) are best for grilling. They're big enough to hold up to the heat and won't overcook as quickly as smaller shrimp.
  • Peel and devein the shrimp: This is a necessary step to remove the shrimp's digestive tract, which can be gritty and unpleasant to eat. You can buy shrimp that has already been peeled and deveined, but it's usually cheaper to buy them whole and do it yourself.
  • Marinate the shrimp: Marinating the shrimp in a flavorful mixture of olive oil, lemon juice, garlic, and herbs for at least 30 minutes helps to tenderize them and infuse them with flavor.
  • Use a hot grill: The grill should be hot enough to sear the shrimp quickly, so that they're cooked through but still juicy. A good rule of thumb is to preheat the grill to medium-high heat (about 450 degrees Fahrenheit).
  • Cook the shrimp for a short time: Shrimp cook very quickly, so it's important to keep a close eye on them. Overcooked shrimp are tough and rubbery, so it's better to err on the side of undercooking them.
  • Serve the shrimp immediately: Grilled shrimp are best served immediately, while they're still hot and juicy. You can serve them with a variety of sides, such as rice, pasta, or salad.

Conclusion:

Grilled rosemary garlic shrimp are a delicious and easy-to-make dish that's perfect for a summer cookout. By following these tips, you can ensure that your shrimp turn out perfectly cooked and flavorful every time. So fire up the grill and get cooking!
