4 cups spinach, thinly sliced
10 medium radishes, quartered
1 small cucumber, peeled, seeded and diced
1/2 red onion, quartered and thinly sliced
1/4 cup pitted oil-cured olives, chopped
1/2 cup packed fresh mint, chopped
1/2 cup packed fresh parsley, chopped
1/3 cup plus 2 tablespoons fresh lemon juice
1/3 cup plus 2 tablespoons extra-virgin olive oil
Freshly ground pepper
1 pound medium shrimp, peeled and deveined
1/2 cup crumbled feta cheese

Steps:

  • Preheat the broiler. Bring a pot of salted water to a boil. Add the orzo and cook until al dente, about 8 minutes. Drain, rinse with cold water and shake dry.
  • Meanwhile, toss the spinach, radishes, cucumber, onion, olives, mint, parsley and 1/3 cup each lemon juice and olive oil in a large bowl. Add the orzo and season with salt and pepper.

1/2 cup Paul Newman's Italian dressing plus 1/4 cup
1/4 cup feta cheese plus 3 T.

1/2 t. lemon juice
1 T. garlic powder
1t. celery salt, salt and pepper
1 T. olive Oil
4 large portabella mushroom caps (optional)

Steps:

  • 1. Boil orzo until al dente. drain. place in bowl add 1/2 cup of Paul Newman's salad dressing, toss with 1/4 cup feta, place in refridge. 2. Cut stems of baby spinach, cut into quarters, place in plastic ziploc. refridge. 3. devein and peel shrimp, place in large ziplock, add garlic powder, olive oil, lemon juice, toss, seal and place in fridge. When ready to serve, grill shrimp. In a serving dish, put marinated orzo and feta, mix with cut spinach. Add addt'l salad dressing, salt, pepper and celery salt to taste. Place shrimp on top, sprinkle with addt'l feta. serve.(Can also be served individually on a grilled using olive oil, portabella mushroom caps)

1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1 tablespoon butter
3 garlic cloves, minced (or to your liking)
1 cup frozen chopped spinach, thawed and drained
1 tomatoes, cored and seeded
2 tablespoons fresh basil, chopped
1/2 cup mozzarella cheese, shredded
1 ounce fresh parmesan cheese, grated
12 large shrimp
1/2 tablespoon creole seasoning (optional)
salt and pepper
1 dash red pepper (optional)

Steps:

  • Melt butter in a large skillet.
  • Add garlic and sauté for 2 minutes.
  • Add orzo and sauté for 3 minutes, stirring occasionally.
  • Add chicken broth and water, bring to a boil.
  • Once at a boil reduce heat to a simmer uncovered.
  • Meanwhile core, seed and dice the tomatoes and thaw and strain the spinach.
  • Once the liquid in the orzo begins to absorb (about 5 minutes) add the tomatoes and stir.
  • Let this simmer for another 5 minutes then add the spinach and stir.
  • Cook until the liquid is fully absorbed (about another 15 minutes).
  • In a separate pan sauté the shrimp and sprinkle with creole seasoning (optional, you can use whatever spice you like) until cooked.
  • Add the cheeses and fresh basil, red pepper (optional) to the orzo and stir, then add in the shrimp and serve!

There are so many shapes of pasta out there. One of my favorites is orzo: rice-shaped pasta. I do not see it used as often as its more popular relatives like spaghetti, penne, linguine et al, which is a shame. I love the fact that orzo can be treated like rice and used to make tomato-based (jollof) or stir-fried dishes. It can be creamy like a risotto or made like rice and served with a stew or sauce. Here I use it to make a cold salad with shrimp and sweet cherry tomatoes. Use a lot of garden-fresh herbs to elevate this salad and feel free to add more vegetables if you want.

12 large shrimp - peeled, deveined, and tails left on
1 tablespoon all-purpose seasoning blend
½ cup uncooked orzo pasta

3 tablespoons Dijon mustard
