Time 5h20m

Number Of Ingredients 10

4 pounds beef ribs
For Marinade
1/2 cup dry red wine
1/4 cup soy sauce
2 tablespoons vegetable oil
2 to 3 cloves garlic (minced)
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
Optional: your favorite barbecue sauce

Steps:

  • Gather the ingredients.
  • In a medium bowl, combine the wine, soy sauce, vegetable oil, barbecue sauce, if using, thyme, salt, pepper, and garlic. Mix well.
  • Place the ribs in a shallow, non-metal baking dish and pour the marinade over them. Make sure the ribs are evenly coated.
  • Cover with plastic wrap and refrigerate for 2 to 6 hours. Bring the ribs to room temperature before grilling.
  • Prepare a gas or charcoal grill for indirect heat. Adjust the heat on the active burner to 250 F. When the grill is hot, remove the ribs from marinade and place on the cool side of the grill to cook indirectly. Discard the marinade. Close the lid and cook until the ribs are tender, turning every 15 minutes, about 3 hours depending on meatiness of the ribs.
  • You can apply barbecue sauce during the last 15 minutes of cook time if you like. Make sure to keep a close eye on the ribs so they don't burn.
  • Once ribs reach an internal temperature of 165 F (make sure to check several ribs), remove from heat and serve.

SLOW-COOKER BARBECUE RIBS

Slow-Cooker Barbecue Ribs image

Yes, you can cook ribs in a slow cooker! In this easy recipe, the seasoning paste transforms into a savory dipping sauce. Slather it on the ribs and pop them on the grill just before serving for a final char.

Categories     main-dish

Time 4h40m

Yield 6 servings

Number Of Ingredients 11

One 6-ounce can tomato paste
1/3 cup packed dark brown sugar
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon ground mustard seeds
2 teaspoons granulated garlic
2 teaspoons smoked paprika
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
3 racks baby back ribs (about 3 pounds)
Oil, for grilling

Steps:

  • Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
  • Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
  • Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

Tips:

  • Choose the right ribs: Baby back ribs are the most popular choice for grilling, but you can also use spare ribs or St. Louis-style ribs.
  • Prepare the ribs: Remove the membrane from the back of the ribs and trim any excess fat.
  • Season the ribs: Rub the ribs with a mixture of spices, such as salt, pepper, garlic powder, onion powder, and paprika.
  • Cook the ribs slowly: The best way to cook ribs is slowly and low. This allows the collagen in the ribs to break down, making them tender and juicy.
  • Use a variety of cooking methods: You can cook ribs on a grill, in a smoker, or in the oven.
  • Baste the ribs: Basting the ribs with a mixture of barbecue sauce and apple cider vinegar helps to keep them moist and flavorful.
  • Let the ribs rest: After cooking, let the ribs rest for a few minutes before serving. This allows the juices to redistribute throughout the ribs.

Conclusion:

Grilled slow-cooked barbecue ribs are a delicious and versatile dish that can be enjoyed by people of all ages. Whether you're cooking them for a backyard barbecue or a special occasion, these ribs are sure to be a hit. With a little planning and preparation, you can easily make fall-off-the-bone ribs that everyone will love.
