This Grilled Steak with Garlic Butter Mushrooms is a recipe that the whole family loved. I wasn't surprised; everyone in the family loves their steaks from the grill. I think it was the garlic butter mushrooms with a hint of herbs that knocked it out of the park for everyone!

Number Of Ingredients 7

2 New York strip loin steaks, with the excess fat, trimmed
6 oz mushrooms, (halved or quartered if large)
1 TBSP olive oil
¼ cup of butter softened
3 cloves of garlic, minced
1 tsp each of fresh thyme, rosemary, and oregano, finely chopped
Kosher salt & fresh ground pepper

Steps:

  • Start by taking your steaks out of the refrigerator and season them with salt and pepper. You can even season them the night before if you are organized. 30-40 minutes is the minimum time you should allow to season the steaks.
  • Preheat your grill to medium-high to high (450-500) degrees F
  • To make the garlic butter, mix the butter, garlic and fresh herbs in a bowl and set aside for the moment.
  • Place a large cast-iron skillet on the grill and allow to heat through.
  • To the hot skillet add the olive oil, a dollop (1-2 TBSP) of garlic butter into the pan along with the mushrooms. Shake the pan (or stir) to coat all the mushrooms. BE CAREFUL THE PAN WILL BE VERY HOT!! Use a good quality oven mitt if you are picking up the skillet!
  • If you need to, add a little more garlic butter to the skillet, just make sure you keep about 2 TBSP in reserve, one for each steak.
  • When the mushrooms are just about done put your steaks on the grill.
  • Only turn the steaks once, you can, however, move the steaks 45 degrees while cooking on each side to get that XX grill pattern on the steaks.
  • Once the steaks have reached the desired doneness and your mushrooms are done, remove everything from the grill.
  • Loosely foil your steaks and allow them to rest for 5 minutes.
  • Once you have the steaks plated plate place 1 TBSP of the garlic butter on each. Divide the mushrooms between the plates.
  • Sit down and enjoy a well-deserved feast!

2 ½ pounds sirloin tips, uncut
½ (750 milliliter) bottle Burgundy wine
2 (14.5 ounce) cans beef broth
4 portobello mushroom caps, sliced
¼ cup butter
1 clove garlic, chopped
½ teaspoon dried thyme
¼ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 shallot, finely chopped
2 tablespoons all-purpose flour

Steps:

  • Preheat an outdoor grill for medium-high heat. Melt butter in a large skillet over medium-high heat. Sautee the shallot until transparent, then add mushrooms, and cook, covered, until darkened, about 5 minutes. Remove mushrooms from pan, and set aside. Deglaze the pan with one can of beef broth, and burgundy wine. Increase heat, and bring to a boil. Allow the mixture to boil until it has reduced by 1/3.
  • Grill the sirloin tips to desired doneness. Season with salt and pepper if desired. Remove to a plate, and set aside.
  • When the sauce is reduced, stir in the other can of beef broth, and garlic. Return to a boil, and continue to cook for another 5 to 10 minutes. Sauce will be thin like au jus. Whisk in flour, and cook until the sauce is the desired thickness. Taste and adjust seasoning if necessary. Stir in the mushrooms. Serve tips with mushroom sauce spooned over.

1 cup dry red wine
2 tablespoons soy sauce
1 tablespoon red wine vinegar
1 teaspoon thyme
1/4 teaspoon black pepper
4 garlic cloves, minced
4 small sirloin steaks
2 tablespoons unsalted butter
4 scallions, coarsely chopped
3/4 lb mushroom, thinly sliced
2 tablespoons flour

Steps:

  • In a shallow dish large enough to hold the steaks in a single layer, combine the wine, soy sauce, vinegar, thyme, pepper and half of the garlic. Place the steaks in the marinade and turn them over to thoroughly coat. Set them aside to marinate while you prepare the remaining ingredients.
  • Preheat the broiler or prepare the grill. If broiling, line a broiler pan with foil.
  • In a medium skillet, melt the butter over medium-high heat. Add the remaining garlic, the scallions and mushrooms and saute until the scallions are limp and the mushrooms are beginning to release their liquid, two to three minutes. Stir in the flour and cook, stirring, until it is no longer visible, about 30 seconds.
  • Remove the steaks from the marinade, reserving the marinade. Stir the reserved marinade into the skillet and cook, stirring, until the mixture has come to a boil and thickened slightly, one to two minutes. Reduce the heat to low and simmer while you cook the steaks.

4 pounds trimmed hanger steak, cut into 8-ounce portions (hanger steak is a very tender cut of which there is only 1 per animal, aka hanging tender or bistro steak)
Salt and pepper
1/8 cup vegetable oil
2 onions, finely diced
2 cloves garlic, finely chopped
1 1/2 pounds mushrooms, cleaned and sliced
2 cups Merlot wine
3 cups demi-glace

  • Heat grill and season meat on both sides with salt and pepper. In a 2-quart saucepan, heat oil and add onions, garlic and mushrooms, sauteing until translucent. Add wine and cook until reduced by half. Meanwhile sear meat on both sides, and grill to about 128 degrees F internal temperature on an instant-read thermometer for medium-rare. 1/2 cup cold water (adds juiciness)
3 tablespoons plain breadcrumbs
1 1/2 tablespoons cornstarch
2 teaspoons baking powder
2 teaspoons beef bouillon powder
2 teaspoons minced onion flakes
2 teaspoons dried parsley flakes
1 1/2 teaspoons Worcestershire sauce (Lea & Perrins)
3/4 teaspoon fresh ground black pepper
1/2 teaspoon soy sauce
1/4 teaspoon ground leaf thyme
3 tablespoons unsalted butter
1/2 cup Spanish onion, cut into 1/4-inch julienne strips
4 ounces fresh mushrooms, cut to 1/8-inch slices
1 mashed garlic clove (use garlic press)

  • MIX the GRILLED SALISBURY STEAKS ingredients in a medium to large mixing bowl (mixture will be soft; patties will shrink considerably while cooking); KNEAD well using hands or mix using a large fork; DIVIDE ground beef mixture to form 4-5 oval-shaped steak patties, about 3/4" thick; PLACE patties onto a platter.
  • PREHEAT indoor grill to medium-high heat; OIL or spray grill surfaces completely with non-stick cooking spray; GRILL beef patties until sear-marks are obtained; TURN patties and repeat process (if using a press-type closable grill, sear without turning), searing until center of each beef patty is still a little pink, not quite done.

  • WHISK 1/4 cup cold water (or 2 tablespoons water with 2 tablespoons cognac) with 1 1/2 tablespoons cornstarch for the SLURRY in a small mixing bowl, until smooth and cornstarch is completely dissolved; ADD the slurry gradually to gravy base in saucepan, while whisking constantly, until thoroughly blended; COOK gravy until thickened and bubbly; REDUCE heat to low; ADD grilled beef patties, immersing them in gravy.
  • STOVETOP FINISH METHOD: Simmer over low heat for 10 minutes. CAREFULLY turn steaks with a spatula. Simmer an additional 10 minutes until steaks are steam-cooked and tender.
  • OVEN FINISH METHOD: Transfer oven-safe large heavy saucepan to preheated 350 F oven. Bake patties uncovered for 20 minutes, immersed in gravy.
  • SERVE: Transfer steaks onto serving plates with a spatula. Whisk gravy to refresh consistency. Ladle gravy over steaks. Serve with desired side dishes. Enjoy!
