Tips:

  • Mise en place: Before starting, ensure all ingredients are prepped and measured, and your grill is preheated.
  • Choose the right chicken: Boneless, skinless chicken breasts are ideal for stuffing. You can also use chicken thighs, but they may take longer to cook.
  • Stuffing consistency: The stuffing should be moist enough to hold together but not too wet. If it's too wet, it will fall out of the chicken during grilling.
  • Stuff the chicken carefully: Use a spoon or your fingers to gently stuff the chicken breasts, being careful not to overfill them. Secure the openings with toothpicks or skewers.
  • Grill over medium heat: This will help the chicken cook evenly without burning. Cook for 10-12 minutes per side, or until the internal temperature reaches 165°F (74°C).
  • Make the olive caper puree while the chicken is grilling: This will allow the flavors to meld and develop.
  • Let the chicken rest before serving: This will allow the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

Grilled stuffed chicken with olive caper puree is a delicious and easy-to-make main course that's perfect for a summer barbecue or weeknight dinner. It's also a great way to use up leftover chicken or vegetables. With a few simple tips, you can create a flavorful and memorable dish that your family and friends will love.
