Time 45m

Number Of Ingredients 7

3 sweet potatoes
3 tablespoons olive oil
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
Salt and black pepper
2 tablespoons butter
2 scallions, thinly sliced

Steps:

  • Heat grill to medium. Peel sweet potatoes, and cut lengthwise into 1/2-inch-thick slices. Toss potatoes in a large bowl with oil, thyme, and cayenne pepper; season with salt and black pepper.
  • Grill potatoes, turning frequently, until tender when pierced with the tip of a paring knife, 20 to 30 minutes.
  • Return grilled potatoes to bowl; add butter, and break potatoes into large pieces with the side of a spoon. Toss in scallions, and serve.

Tips:

  • Choose the right sweet potatoes: Look for firm and unblemished sweet potatoes that are about the same size so they cook evenly.
  • Don't overcrowd the grill: Leave some space between the sweet potatoes so they can cook evenly and get nice grill marks.
  • Cook the sweet potatoes until they are tender: You can check this by piercing them with a fork or knife. They should be soft, but not mushy.
  • Make the gorgonzola spread ahead of time: This will give the flavors time to meld together. You can make it up to a day in advance.
  • Serve the sweet potatoes while they are still warm: This is when they will be the most flavorful.

Conclusion:

Grilled sweet potatoes with gorgonzola spread is a delicious and easy-to-make side dish that is perfect for any occasion. The sweet potatoes are smoky and tender, while the gorgonzola spread is creamy and tangy. This dish is sure to be a hit with everyone at your table.
