1 cup packed brown sugar
1 cup Louisiana-style hot sauce
1/4 cup butter, cubed
1 tablespoon cider vinegar
1/3 cup sugar
1/2 cup Italian seasoning
1/4 cup dried rosemary, crushed
1/4 cup paprika
1/4 cup chili powder
1/4 cup pepper
2 tablespoons cayenne pepper
1 cup blue cheese salad dressing
1/2 cup ranch salad dressing
Celery sticks

Steps:

  • Cut chicken wings into 3 sections; discard wing tip sections. Set wings aside., In a small saucepan, bring brown sugar, hot sauce, butter and vinegar to a boil. Reduce heat; simmer, uncovered, until butter is melted and sauce is heated through, 6-8 minutes. Cool., In a large shallow dish, combine sugar and seasonings. Add chicken wings in batches and turn to coat evenly., Grill, covered, over indirect medium heat until juices run clear, 35-45 minutes, turning and basting occasionally with sauce., In a small bowl, combine blue cheese and ranch salad dressing; serve with chicken wings and celery sticks.

¼ cup fresh squeezed orange juice
2 tablespoons lemon juice
2 tablespoons lime juice
1 teaspoon salt
2 teaspoons ground black pepper
1 tablespoon chopped fresh thyme
1 tablespoon chopped garlic
1 tablespoon chopped fresh ginger
1 habanero pepper, seeded and chopped (use gloves)
1 tablespoon curry powder
½ teaspoon ground allspice
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
½ cup vegetable oil
12 large chicken wings, tips removed and wings cut apart at joint

Steps:

  • Mix together the orange juice, lemon juice, lime juice, salt, black pepper, thyme, garlic, ginger, habanero pepper, curry powder, allspice, nutmeg, and cinnamon in a bowl. Whisk in the vegetable oil. Pour 3/4 of the marinade into a resealable plastic zipper bag, and place the chicken wing pieces into the bag. Squeeze out any air, and mix the wing pieces with the marinade, and refrigerate from 4 to 12 hours. Place the remaining 1/4 of the marinade in a small bowl, and refrigerate until grilling time.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the wing pieces from the bag of marinade, and discard the used marinade. Sprinkle the wings with salt and pepper to taste, and sear on the hottest part of the grill until the wings begin to brown, about 4 minutes per side.
  • Move the wings to a less-hot part of the grill, baste with the unused portion of the marinade, and close the grill. Grill until the wings are golden brown, show good grill marks, are no longer pink in the center, and the juices run clear, 10 to 15 more minutes. Baste again with marinade and turn after 5 to 8 minutes.

3 lbs chicken wings
1 cup hot sauce
1 cup brown sugar
1 tablespoon vinegar
1/4 cup butter
1/8 cup black pepper
1/8 cup minced garlic
1/4 cup italian seasoning
1/8 cup chili powder
1/8 cup paprika
1/8 cup dried rosemary
2 tablespoons red peppers

Steps:

  • Combine first 4 ingredients and warm on stove or in microwave, then put in a spray bottle and set aside.
  • Rinse and drain 3 1/2 to 4 pounds chicken wings. Pour some of the Red Hot hot sauce over them and toss.
  • Mix rest of spices in bowl.
  • Add some of the spice mix to the chicken until generously coated. You will lose some in the cooking, so dont skimp.
  • Place the wings on a gas grill (or smoker) and slow cook them at a low temperature.
  • After 20 minutes baste/mist with sprayer at least every 10 minutes.
  • Flip them after you mist them.
  • Total cooking time should be around 1 1/2 to 3 hours, depending on the heat of the grill.
  • They are done when they break apart at the joint or you can break the wing tip off.
