LISA'S GRILLED ZUCCHINI

Lisa's Grilled Zucchini image

The extra-virgin olive oil from Countess Lisa-Contini Bonacossi's estate is a favorite of mine and an important element in Lisa 's great cooking. She has an easy going style, changing recipes according to what's in the garden and larder, and is hard to pin down about quantities. Lisa slices her zucchini with an electric meat slicer. I use the 3-mm. blade of my food processor to slice by hand, not with the machine. Can be prepared in 45 minutes or less.

Provided by Faith Willinger

Yield Serves 4 to 6

Number Of Ingredients 6

4 medium zucchini (about 1 1/2 pounds total), trimmed
1 to 2 garlic cloves, minced
2 tablespoons chopped fresh flat-leafed parsley leaves
fine sea salt to taste
freshly ground black pepper to taste
3 to 4 tablespoons extra-virgin olive oil

Steps:

  • Slice zucchini lengthwise 1/8 inch thick with a mandoline or other hand-held slicing device. Heat a lightly oiled well seasoned cast-iron ridged grill pan over moderately high heat until hot and grill zucchini slices in batches until grill marks appear, 2 to 3 minutes on each side. Arrange zucchini slices as grilled in one layer on a platter and sprinkle with garlic and parsley. Season zucchini with salt and pepper and drizzle with oil.

Tips:

  • Select firm and fresh zucchini: Choose zucchini that are firm to the touch and have a deep green color. Avoid those that are soft, bruised, or have yellow or brown spots.
  • Slice zucchini evenly: Cut the zucchini into uniform slices so that they cook evenly. A mandoline slicer can be helpful for achieving consistent thickness.
  • Marinate zucchini: Marinating the zucchini in a mixture of olive oil, herbs, and spices before grilling enhances its flavor. You can use a simple marinade or experiment with different combinations of ingredients.
  • Grill zucchini over medium heat: Grilling the zucchini over medium heat allows them to cook through without burning. Use a well-seasoned grill pan or a grill with a non-stick surface to prevent sticking.
  • Season zucchini generously: Sprinkle the zucchini with salt, pepper, and other desired seasonings before grilling. This helps to bring out their natural flavor.
  • Cook zucchini until tender-crisp: Cook the zucchini until they are tender-crisp, about 2-3 minutes per side. Overcooking will make them mushy.
  • Serve zucchini immediately: Grilled zucchini is best served immediately after cooking. You can garnish them with fresh herbs, grated cheese, or a squeeze of lemon juice.

Conclusion:

Grilled zucchini is a simple but flavorful side dish that can be enjoyed on its own or as part of a larger meal. With its versatility and ease of preparation, grilled zucchini is a great option for busy weeknight dinners or casual gatherings. Experiment with different marinades and seasonings to find your favorite combination, and enjoy this delicious and healthy vegetable at its peak in the summer months.
