GROUND BEEF CURRY (KIMA CURRY)

Ground Beef Curry (Kima Curry) image

This recipe is from one of my new favorite cookbooks, Extending the Table. The notes on this recipe say that this Swahili dish is served by a restaurant in the heart of Nairobi. I have only modified it to make the recipe fit into Zaar format, to preserve the authenticity of the recipe. This is a very mild, very easy to make curry.

Tips for Making Authentic Ground Beef Curry:

- **Choose the right ground beef**: Use high-quality ground beef with a fat content of around 20%. This will give your curry a rich and flavorful taste. - **Use fresh spices**: Whole spices like cumin seeds, coriander seeds, and bay leaves release their flavor better than pre-ground spices. Toast them in a pan before using to enhance their aroma and flavor. - **Don't be afraid to use ginger and garlic**: These two ingredients add a lot of flavor to the curry. Use fresh ginger and garlic for the best results. - **Use yogurt or coconut milk**: These ingredients add a creamy and rich texture to the curry. If you're using yogurt, be sure to whisk it well before adding it to the curry to prevent it from curdling. - **Cook the curry slowly**: This will allow the flavors to meld and develop. Simmer the curry for at least 30 minutes, or longer if you have time. - **Serve with rice or naan**: This is the traditional way to serve ground beef curry. Serve it with a side of raita (cucumber and yogurt salad) for a refreshing contrast.

Conclusion:

Ground beef curry is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to use up leftover ground beef, and it's also a budget-friendly meal. With a little planning and effort, you can make a restaurant-quality ground beef curry at home.
