Ground Lamb-Stuffed Portabellas image

This recipe makes a lot of tasty appetizers but it's easy to down-size. These are rich and tasty, so good that it's the only lamb recipe in my collection here. This is adapted from chef Tiffanie Hicks of the Speakeasy Supper Club.

1 -2 tablespoon extra virgin olive oil
1 1/2 red onions, finely diced
2 1/2 lbs ground lamb
salt and black pepper
2 -3 tablespoons ground cumin
1 quart whipping cream
1/2 loaf brioche bread, finely diced
3/8 cup grated swiss cheese
3/8 cup grated gruyere cheese
3/8 cup grated mozzarella cheese
36 -40 portabella mushrooms, 3 inches in diameter
2 cups beef stock
extra cheese, for topping
breadcrumbs, for topping

Steps:

  • In a large, deep-sided skillet, heat oil over medium-high heat and saute the onions; add the lamb (crumbled), salt, pepper and cumin; stir meat as needed to prevent sticking.
  • When lamb is fully cooked, add cream; simmer for 10 minutes.
  • Stir in diced bread; cook for about 2 minutes then remove from heat.
  • When meat is cool enough to handle, knead in cheeses; taste and adjust salt, pepper and cumin if necessary.
  • Snap off mushroom stems and spoon out gills so portobellos are shallow cups.
  • Bring stock to a boil and place mushrooms in, 1 minute on each side.
  • Preheat broiler.
  • Stuff portobello caps with lamb mixture, then top each one with more cheese and crumbs.
  • Place under broiler to rewarm and crisp the topping.
  • Serve hot.

LAMB AND RICE STUFFED PEPPERS



Lamb and Rice Stuffed Peppers image

4 large red bell peppers
1 tablespoon unsalted butter
1 1/4 cups orzo pasta
3 to 4 cloves garlic, chopped
2 cups water
12 ounces ground lamb
Kosher salt and freshly ground black pepper
2 sprigs fresh marjoram or oregano, leaves picked and chopped or 1 1/2 teaspoons dried
2 small sprigs fresh rosemary, leaves picked and finely chopped
1/4 cup chopped fresh flat-leaf parsley
1/4 cup, plus 2 tablespoons extra-virgin olive oil
1 onion, chopped
2 cubanelle peppers or mild frying peppers, chopped
1 (28-ounce) can tomato sauce
1 cup crumbled feta cheese or goat cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Remove the tops from the peppers and scoop out the seeds and ribs. Carefully trim the bottoms if necessary to make peppers stand straight when upright. Place a steamer rack over a few inches of boiling water, or set a colander over a couple of inches boiling water in a large stock pot. Place the peppers in the steamer and cover. Steam 10 minutes, and remove to a baking dish or casserole.
  • Heat 1 tablespoon butter in a saucepot with a tight-fitting lid over medium heat. Add the orzo and brown lightly, and then add 1/2 the garlic and stir. After 30 seconds stir in the water. Bring to a boil, and then reduce heat to a simmer, cover and cook 15 minutes. Spread the orzo onto a baking sheet and cool.
  • Place the ground lamb in a bowl and add the cooled orzo. Season with 1/2 the marjoram, the rosemary, 2 tablespoons parsley, and season with salt, and pepper. Overstuff the peppers with the filling. Drizzle about 1/4 cup extra-virgin olive oil over the peppers, pouring about 1 tablespoon over top of each. Arrange the peppers in a casserole or small baking dish and roast 50 minutes to 1 hour, until crispy at the edges and cooked through.
  • Meanwhile, heat the remaining 2 tablespoons extra-virgin olive oil in a saucepot over medium-high heat. Add the onions, cubanelle peppers, remaining garlic, remaining marjoram, and saute until soft. Add the tomato sauce, and season with salt, and pepper.
  • Cool the peppers and sauce for a make-ahead meal or serve immediately.
  • For reheating: Add 1/2 cup water to the baking dish, and place in a heated 375 degree F oven, covered until warmed throughout, about 30 minutes. Uncover and let the water evaporate, and crisp the top, 20 minutes more. Reheat the sauce over medium-low heat to heat through.
  • Serve the peppers hot with sauce over top, or in a puddle underneath the peppers. Top with crumbled feta.

BISON STUFFED PORTABELLAS

4 portabella mushrooms, stemmed, gills removed (5 to 5 1/2 inches diameter)
1 tablespoon extra-virgin olive oil
12 oz ground bison
1/2 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 teaspoon salt
1 teaspoon finely chopped garlic
4 cups packed baby greens (such as spinach or kale)
1 egg
1 tablespoon Dijon mustard
2 tablespoons fresh thyme leaves
1 teaspoon low-sodium tamari soy sauce
Fresh chopped basil leaves or Italian (flat-leaf) parsley, if desired

Steps:

  • Heat oven to 400°F. Line baking pan with sides with cooking parchment paper.
  • Rub mushrooms with 1 teaspoon of the olive oil. Place on pan. Roast with tops down 20 minutes; remove from oven. Drain off any liquid that has accumulated on the pan, then pat mushrooms dry with paper towel.
  • Meanwhile, in 10-inch skillet, heat 1 teaspoon of the oil over medium heat until hot. Add the bison, and cook 4 to 6 minutes or until browned. Transfer to small bowl, and set aside.
  • Add remaining 1 teaspoon oil to the pan, and heat until hot. Add onion, bell pepper and salt. Cook 3 to 5 minutes or until softened. Add the garlic and greens, and cook until greens wilt. Remove from heat; cool 5 minutes.
  • Beat egg in large bowl. Set aside.
  • Stir bison, mustard, thyme and soy sauce into greens mixture in pan; transfer to bowl with egg, and stir to combine. Divide evenly among the mushrooms (about 3/4 cup each).
  • Bake 15 to 20 minutes or until mushrooms are tender. Sprinkle with chopped fresh basil.

1 lb ground lamb
2 large green peppers
2 small onions
1 1/4 ounces onion soup mix
1 egg
2 teaspoons minced garlic cloves
1 1/2 cups tomato sauce (we used Chunky Mushroom Ragu)
1 cup breadcrumbs
2 cups Italian cheese blend
cooking spray

Steps:

  • Preheat oven to 375 degrees Fahrenheit
  • Take ground lamb and add onions, soup mix , bread crumbs and egg and fold in together.
  • Wash and core peppers. Cut them into halves down the middle.
  • Pack the lamb meat into the pepper halves firmly.
  • Bake the peppers uncovered in a glass dish for 30 mins or until meat is browned.
  • Remove peppers from oven and spoon tomato sauce over peppers.
  • Bake for an additional 15 minutes.
  • Take peppers out.
  • Raise oven temp to broil.
  • Cover peppers over with cheese and bake until cheese is golden brown.
  • Remove from oven and serve hot.

1 lb. lean ground lamb
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1/2 tsp. pepper
1 Tbsp. olive oil
1 bunch watercress, thick stems removed
4 onion sandwich rolls, split, toasted

Steps:

  • Combine cream cheese and herbs; roll into 4 balls. Flatten each into disk on sheet of waxed paper. Refrigerate 15 min.
  • Mix meat, Worcestershire sauce and pepper just until blended; shape into 8 thin patties. Place cream cheese disks on 4 patties; cover with remaining patties. Press edges together to seal.
  • Heat oil in large skillet on medium heat. Add patties; cook 5 to 6 min. on each side or until done (160°F). Place burgers on bottom halves of rolls; cover with watercress and tops of rolls.

4 large portobello mushrooms
2 tablespoons olive oil
1 small yellow onion, diced
2 cloves garlic, minced, or more to taste
1 pound ground chicken
1 ½ cups shredded Gouda cheese, divided
1 small tomato, seeded and chopped
4 ounces spreadable goat cheese
2 tablespoons chopped fresh parsley
½ teaspoon minced fresh rosemary
½ teaspoon minced fresh basil

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a casserole dish large enough to hold the mushrooms with cooking spray.
  • Remove mushroom stems; chop and set aside in a medium bowl. Use a spoon to carefully remove gills, making sure you don't tear the mushroom caps; discard gills. Invert the mushroom caps and place in the prepared dish.
