GROUND TURKEY STROGANOFF

Ground Turkey Stroganoff image

This original recipe came from an A.1. steak sauce recipe my dad used to make for a simple beef stroganoff. I tweaked it a bit to make it a little more healthy with ground turkey. I know A.1. is hardly a traditional stroganoff ingredient, but it really works out and tastes great! NOTE: If you want your stoganoff sauce to be thinner, add chicken stock or water.

LOW FAT GROUND TURKEY STROGANOFF

Low Fat Ground Turkey Stroganoff image

A nice low-fat alternative to normal stroganoff, and even lighter than recipe 201828. I would start cooking the noodles right away, as the ones I use (catelli) take forever to get to the softness i like. Freezes great for lunches at work later!

1½ pounds ground turkey
2 Tb dry sherry, optional
¾ cup beef broth
¾ cup milk
1 teaspoon Dijon mustard
1 pound egg noodles
2 tablespoons unsalted butter
1 cup sour cream
Kosher salt and freshly ground pepper
Chopped fresh flat-leaf parsley, for garnish

1 teaspoon dried thyme
½ teaspoon ground nutmeg

Steps:

  • In a large, heavy saucepan, heat the oil over medium heat. Add the onion and mushrooms and cook for about 5 minutes, or until soft. Bring to a boil over high heat then reduce heat to a simmer and cook, uncovered, for 10 minutes, until nicely thickened. While the sauce is simmering, cook the egg noodles in a large pot of salted boiling water for 8-9 minutes, or until al dente. Drain, return noodles to the pan, and toss with the butter so the noodles won’t stick together. Cover loosely to keep warm. Stir the sour cream into the sauce and heat through. Add salt and pepper to taste. Add to the warm buttered egg noodles and toss to coat. Served garnished with parsley.

Time 50m

Yield 3-6 serving(s)

Number Of Ingredients 6

1 lb ground turkey
1 (1 ounce) package brown gravy mix (you can use the canned gravy too, but I prefer the dry mix)
2 1/2 cups water
1/4-1/2 teaspoon dried parsley
1/4-1/2 teaspoon dried dill
1 cup sour cream (I use the fat-free)

Steps:

  • Brown turkey well in a large frying pan.
  • When brown, add the brown gravy mix, water, herbs and pepper Bring to a boil, then reduce heat and let slow boil for 15-20 minutes to thicken the sauce.
  • (the sauce does have to thicken or it will be too watery and thin. You could use less water but this slow boiling keeps the turkey moist and adds the beef flavor to the turkey. If you do use the canned gravy, skip the 2-1/2 cups of water, but do add at least a cup) Add sour cream, mix well and serve.
  • You can add mushroom, peas, onions or whatever to this.
  • If I add onions and mushrooms, I usually saute them with the turkey.
  • Serve over egg noodles, with a big salad and a slice of french bread.

Tips:

  • Use a large skillet or Dutch oven: This will ensure that you have enough room to cook the turkey and vegetables without overcrowding the pan.
  • Cook the turkey in batches if necessary: If you're using a smaller skillet, you may need to cook the turkey in batches to avoid overcrowding the pan. Just be sure to cook it all the way through before adding it back to the skillet.
  • Don't overcook the turkey: Overcooked turkey will be tough and dry. Cook it just until it's cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Use a variety of vegetables: This will add flavor and texture to your stroganoff. Some good options include mushrooms, onions, carrots, and celery.
  • Use a good quality sour cream: Sour cream is a key ingredient in stroganoff, so it's important to use a good quality brand. Look for a sour cream that is thick and creamy.
  • Serve over egg noodles: Egg noodles are the traditional accompaniment to stroganoff, but you can also serve it over rice or mashed potatoes.

Conclusion:

Turkey stroganoff is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover turkey. With a few simple tips, you can make a stroganoff that is sure to impress your family and friends.
