1 pound carrots, cut into 3-inch pieces
2 celery ribs, cut into 3-inch pieces
1 small onion, quartered
1 corned beef brisket with spice packet (3 to 3-1/2 pounds)

1 bay leaf
1 bottle (12 ounces) Guinness stout or reduced-sodium beef broth
1/2 small head cabbage, thinly sliced

Steps:

  • In a 6-qt. slow cooker, combine potatoes, carrots, celery and onion. Add corned beef (discard spice packet or save for another use)., Place cloves, peppercorns and bay leaf on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place in slow cooker. Pour stout over top., Cook, covered, on low 8-10 hours or until meat and vegetables are tender, adding cabbage during the last hour of cooking. 1 (12 fluid ounce) can or bottle dark beer (such as Guinness®)
4 cloves garlic, minced
1 (3 pound) corned beef brisket with spice packet
1 cup brown sugar
10 baby red potatoes, quartered
4 large carrots, peeled and cut into matchstick pieces
1 onion, peeled and cut into bite-sized pieces
½ head cabbage, coarsely chopped

Steps:

  • Combine water, beer, and garlic in a multi-functional pressure cooker (such as Instant Pot®). Place trivet inside.
  • Rub all sides of brisket with brown sugar. Place on the trivet and sprinkle spice packet on top. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 90 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer brisket to a baking sheet.
  • Cover brisket with aluminum foil; let rest for 15 minutes.

1 cup brown sugar
1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness(r))

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Rinse the beef completely and pat dry.

4 lbs corned beef brisket, Flat cut with seasoning packet
2 onions, peeled and cut into eights
15 ounces Guinness stout
2 cups water

Steps:

  • Remove excess fat from corned beef.
  • Place onions in a crock pot then brisket with season packet on top of onions.
  • Pour beer and water over place lid on.
  • Set crock pot on low for 6 hours.
  • Place cabbage on and cook on high for 1-2 more hours.
  • Remove meat carefully. It is very tender and can fall apart easily.
  • Slice any excess fat. It should slide right off.
  • Then Proceed with Recipe #57813 if desired.

2-3 lb flat cut corned beef (with spice package)
1 lb baby red or white potatoes (tiny ones, or quarter larger ones)
1/2 lb peeled baby carrots
2 clove garlic, peeled and halved
1 bay leaf
1 bottle (12 oz) guinness stout
1/2 head green cabbage, optional (see note)

Steps:

  • 1. Coat slow cooker liner with non-stick cooking spray. Place corned beef in slow cooker. Sprinkle contents of seasoning packet over meat.
  • 2. Add potatoes, carrots, garlic and bay leaf on top of meat. Pour the beer over all.
  • 3. Cover slow cooker and cook on low for 8 hours.
  • 4. When cook time is done, remove meat to cutting board Slice against grain to serve. Serve with vegies.
  • 5. NOTE: If you want cabbage, it can be cooked separately on stove top (my preferred method) or added in slices to the slow cooker during the last 10-60 minutes of cook time.

  • To prepare the cabbage slaw, combine the coleslaw mix and onion in a large bowl. Whisk together the mayo, buttermilk, sugar, vinegar, lemon juice, salt, black pepper, and poppy seeds in a medium-sized bowl until fully combined. BRAISED GUINNESS CORNED BEEF:
3 pounds corned beef brisket
3 cans Guinness (one to drink while you cook!)
3 tablespoons sugar
CREAMER POTATOES:
baby or fingerling potatoes (about 30)
2 cloves garlic
2 sprigs rosemary
salt and pepper, to taste
truffle oil (optional)
BRUSSELS SPROUTS:
brussels sprouts (about 30)
1 clove garlic, minced
salt and pepper, to taste
olive oil
truffle oil (optional)

Steps:

  • BRAISED GUINNESS CORNED BEEF: Rinse the corned beef under cold water. Place it in an oven-proof pot, preferably a dutch oven, along with the spice packet if it is included. First take a chug of the Guinness, and then pour the rest into the pot Pre-heat oven at 350°F. Place the corned beef in the oven and braise it for 2 1/2 to 3 hours or until tender. Remove the corned beef and let it sit on a plate. Add 3 tablespoons of sugar to the pot and place it on high heat. Reduce the glaze for about 10 mins. Slice the corned beef and place it back into the pot Keep warm until ready to serve. CREAMER POTATOES: Wash the potatoes and dry. In a roasting pan or cast iron pan, add the potatoes, 2 whole garlic cloves, rosemary, enough olive oil to coat and a large pinch of salt and pepper. Toss well in pan. Place it in a 350°F oven and roast for about 1 hour or until tender. Remove from the oven and drizzle with truffle oil when ready to serve BRUSSELS SPROUTS: Wash the sprouts and dry. Cut the ends off and split the sprouts in half. Mince 1 clove of garlic and 1 shallot. Heat the saute pan on high heat until it is hot. Add a few tablespoons of olive oil and place the brussels sprouts flat side down. Let them saute in the pan without touching it for 1 to 2 mins to caramelize the bottom. Add a pinch of salt and pepper. Add the minced shallots and garlic. Stir or toss the brussels sprouts in the pan to mix. De-glaze the pan with white wine or water. In my case I used sake and mirin. Cook until the liquid has evaporated, turn the heat off and place a lid over it to keep warm until serving.

I found this recipe on All Recipes many years ago. I've changed the temp and cooking time and it turns out better. I have not made corned beef any other way since first trying it this way. The sugar helps to cut the saltiness of the corned beef and the beer adds a great flavor.

1 pkg seasoning that comes with corned beef
1 c brown sugar
1 - 12 oz bottle guinness dark beer

Steps:

  • 1. Preheat oven to 350 degrees F. Rinse the beef completely in water and pat dry.
  • 2. Place the brisket on rack in a roasting pan or Dutch oven. Rub the brown sugar on the corned beef to coat entire beef, including the bottom. Pour the bottle of Guinness beer around, and gently over the beef to wet the sugar. Sprinkle the seasoning packet over top.
  • 3. Cover, and place in preheated oven. Bake for 3 hours. Allow to rest 5 minutes. The last hour you can add carrots, red potatoes, and cabbage wedges. Cover with foil and bake 1 more hour.
  • 4. Note: I find some corned beef takes longer to get tender so just cook until it is done. Over the years, I have found this recipe works well in the slow cooker. I have never made it on a rack, as the original recipe states.
