2 tablespoons olive oil
1 whole chicken, cut up
salt and ground black pepper to taste
1 medium onion, chopped
4 cloves garlic, minced
½ cup sofrito
2 potatoes, peeled and cubed
2 cups chicken broth
1 (8 ounce) can tomato sauce
1 (1.41 ounce) package sazon seasoning
½ teaspoon ground cumin
1 bay leaf
2 tablespoons cold water
1 tablespoon cornstarch

Steps:

  • Heat olive oil over medium-high heat in a Dutch oven. Season chicken with salt and pepper and add to the hot pot to brown, 6 to 7 minutes per side. Transfer chicken a bowl and cover with an aluminum foil tent.
  • Reduce heat to medium; add onion to the pot and saute until translucent, about 5 minutes. Add garlic and cook for 1 minute. Stir in sofrito and cook for 2 to 3 minutes. Add potatoes, chicken broth, tomato sauce, sazon, cumin, and bay leaf; bring to a boil. Return chicken to the pot. Cover and cook for 1 hour. Remove chicken.
  • Mix water and cornstarch together in a small bowl; stir into simmering mixture until nicely thickened. Place chicken back into the pot and continue to cook about 10 minutes more.

¼ cup rancho adobo sazon criollo, or to taste
1 red onion, chopped into large pieces
2 Cubanelle peppers, chopped

⅓ cup vegetable oil
1 tablespoon light brown sugar
⅓ cup tomato paste
1 stalk celery, chopped

Steps:

  • Place chicken pieces in a bowl and season generously with ranchero sazon criollo. Add onion, Cubanelle peppers, sazon liquido, and garlic paste. Toss to coat chicken evenly.
  • Put oil in the bottom of a heavy pot. Add brown sugar and do not stir. Turn heat to medium-high and cook until sugar is very, very dark brown but not burned, 5 to 10 minutes. 1 gallon water
1 tablespoon olive oil
1 green bell pepper, chopped

1 tablespoon capers

Steps:

  • In a large pot, add the codfish and cover with 1 gallon of water. Bring it to a boil and cook for 10 minutes to remove the salt. Drain the cod and break it into small flakes with a spoon. Set aside.
  • In a large frying pan heat the olive oil over medium heat. Add the green peppers, onion, tomatoes, and culantro and cook for 2 minutes. Add the codfish, bay leaves, red bell peppers, tomato paste, and capers. Cook until the vegetables are soft, about 5 minutes. Add the boiled potatoes and cook until heated through, about 2 more minutes.

2 dried mushrooms
1 1/2 cups warm water
1/2 cup leftover chicken and/or pork adobo meat, shredded (or shredded rotisserie chicken)
1 tablespoon red or white wine (optional)
3 tablespoons vegetable oil, divided
4-6 cloves garlic, minced
1 small to medium onion, cut into slivers
1-2 celery ribs, chopped
1 small red bell pepper, seeded and cut into thin strips
1/4 cup fresh shrimp, peeled and deveined, or dried shrimp
1/4 cup soy sauce, plus a dash for serving
1 medium carrot, cut into thin strips
1 chayote or zucchini, cut into thin strips, or 1/2 head broccoli or napa cabbage, chopped
1/2 pound bihon (dry rice noodles) (see Note)
1/2 teaspoon freshly ground black pepper
Dash freshly squeezed calamansi (or lime) juice, for serving (optional)

Steps:

  • Soak the mushrooms in the warm water for at least 20 minutes. Drain the mushrooms, reserve the soaking liquid, and thinly slice the mushrooms. Combine the adobo and wine (if using) in a bowl.
  • Heat 2 tablespoons of the oil in a large skillet or wok over medium heat until it shimmers. Add the garlic and stir-fry until light gold. Add the onion and cook, stirring occasionally, for about 2 minutes, or until translucent. Stir in the celery and bell pepper. Cook, stirring occasionally, for 2 minutes. Add the adobo. If you are using fresh shrimp, add them, too. Cook, stirring, for about 1 minute. Remove from the heat and set aside.
  • Pour the reserved mushroom soaking liquid into a saucepan and add the soy sauce, mushrooms, carrot, and chayote. If you are using dried shrimp, add those, too. Bring the mixture to a boil over high heat. Add the noodles and toss with the rest of the ingredients. As the noodles become tender, separate them until they are able to mix evenly with the veggies, about 3 minutes.
  • When the noodles have completely absorbed the liquid and are chewable, stir in the celery, bell pepper, and adobo mixture. Season with the black pepper and mix thoroughly. Pour in the remaining 1 tablespoon oil. Reduce the heat to low to gently fry the noodles for about 2 minutes. Serve with an extra dash of soy sauce and calamansi juice, if using.

1 pig's tail, cut into 1 inch pieces
2 pig's ears, chopped
1 pound chorizo, sliced into chunks
½ pound pork shoulder, cubed
6 ounces pancetta bacon, diced

4 stalks celery, chopped
6 cloves garlic, chopped

Steps:

  • Place garbanzo beans in a large container and fill with water to cover. Let soak overnight.

2 ounces canned chipotle sauce
1/4 tablespoon chopped garlic
1/4 tablespoon ground cumin

Steps:

  • Boil the chicken for 25 minutes or until cooked. Set aside.
  • In a blender combine the tomatoes, chipotle sauce, garlic, cumin, pepper, salt and add 9 ounces of water and blend for a few seconds.
  • In a saucepan add the vegetable oil and onions and cook for 3 minutes or until the onions turn golden.

2 pounds boneless pork shoulder
1 large onion, coarsely chopped
3 cloves garlic, chopped
2 (12 ounce) cans tomatillos, drained and chopped
1 (7 ounce) can diced green chile peppers
2 fresh jalapeno peppers, sliced
½ cup fresh chopped cilantro
1 teaspoon dried oregano
salt and pepper to taste
1 quart water
1 cup shredded Monterey Jack cheese
¼ cup sour cream
4 sprigs fresh cilantro, for garnish

Steps:

  • Heat the oil in a large skillet over medium heat, and brown the pork on all sides. Reserving the juices in the skillet, transfer the pork to a slow cooker.
  • In the skillet with the pork juices over medium heat, saute the onion and garlic about 1 minute. Transfer to the slow cooker, along with skillet juices.
  • Mix the tomatillos, green chile peppers, jalapeno peppers, and cilantro into the slow cooker. Season with oregano, salt, and pepper. Pour in 1 quart water, or enough to cover all ingredients. Cover, and cook on High for 6 to 7 hours.
  • Shred the cooked pork with a fork. Spoon the slow cooker mixture into bowls, and top with Monterey Jack cheese, sour cream, and fresh cilantro sprigs to serve.

This is my favorite dish, every time I visit my parents they must cook this for me. It's a traditional dish in Dominican families sometimes even served at least once a week. The adobo powder may be found in the Hispanic isle at your local supermarket. The Goya Adobo has a red cap. You'll find yourself seasoning everything with this. Serve with my Dominican Bean Stew / Habichuelas Rojas Guisadas

1 (2 -3 lb) whole chickens, cut into pieces
2 -3 tablespoons lime juice (about the juice of 2 limes)
2 cubanelle peppers, seeded and chopped or 2 green bell peppers
1 small red onion, chopped
2 plum tomatoes, chopped
2 stalks fresh cilantro, with leaves
2 tablespoons oil
1/4 cup seedless olive, sliced (optional)
2 tablespoons tomato paste
1/2 teaspoon mashed garlic
1/2-1 tablespoon sugar
1/2 teaspoon crushed dried oregano
1/2 tablespoon salt
2 tablespoons goya brand original adobo seasoning

Steps:

  • Wash chicken with sterilized water and rub the chicken with the lime juice. In a bowl mix the chicken with peppers, tomatoes, onions and season with oregano, garlic and a pinch of salt. Liberally sprinkle with the adobo. Marinade for at least an hour and as much as to 3 days in the fridge.
  • In a large pot (cast iron pot preferred) heat the oil over medium-high heat, add the sugar and let it brown, then put the chicken in pot, reserve the vegetables and liquid. Saute until the meat is light brown. Add 2 tbsp of water, cover and simmer over medium heat until meat is tender adjusting water when necessary, add the rest of the ingredients (except tomato paste) including vegetables and marinade cover again and simmer adding more water if needed. There should be about 1" worth of liquid.
  • When the vegetables are tender mix 1/2 cup of water and the tomato paste and add to the pot add the cilantro continue to simmer over low heat to produce a thin sauce. Adjust salt to taste remove cilantro before serving. Serve over white rice with stewed beans.
  • Enjoy!

2 cups water
1 cup potatoes, chopped

11 pimento-stuffed olives

Steps:

  • Heat a Dutch oven on medium heat. Generously season the chicken with the Adobo seasoning, then add the olive oil and chicken to the Dutch oven. Lightly brown the chicken by cooking chicken for about 5 minutes on each side. Set chicken aside. Add the sofrito, Sazon, tomato sauce, chicken bouillon, Italian seasoning, water, potatoes, carrots, bay leaves and olives to a pot. Bring to a boil, then add the chicken in. Lower the heat to a simmer and cook the stew for 25 to 30 minutes, or until the chicken is cooked through. Check the stew for seasoning and add more chicken bouillon if it needs a bit more flavor. 2 tablespoons vegetable oil
2 potatoes
1 cup fresh cilantro
1/2 large white onion
5 garlic cloves
2 teaspoons coriander seeds
2 1/4 cups water
2 cups canned tomato puree
1 (6 ounce) can corn
1 (6 ounce) can mixed vegetables
5 jalapeno peppers
3 plum tomatoes

Steps:

  • Cut the sliced flank steak into small pieces about the size of postage stamps.
  • Set steak pieces to simmer in vegetable oil over medium-low heat while preparing vegetables.
  • Dice the potatoes into small cubes and place them in a microwave safe bowl.
  • Microwave the potatoes 2-3 minutes on high until almost done.
  • Add the potatoes to the meat.
  • Add 1 cup fresh cilantro to the meat.

  • Remove the blackened skins and using a mortar and pestle, grind the chiles and tomatoes together along with 2 cloves of garlic.

1 tablespoon olive oil
1 strip bacon, sliced

Steps:

  • In a Dutch oven, heat the vegetable oil and sugar over medium-high heat. Add the sazon seasoning and the bouillon and cook until the sugar lightly browns. Add the chicken and let it fry, stirring it around to get all the sides browned, about 10 to 15 minutes. Stir in the tomato paste, cumin and chili powder. Add water to just cover the top of the chicken. Let the water come to a boil and stir to make sure the tomato paste is combined. Taste the water for salt*.   • In a medium saucepan over medium heat, add the oil and bacon. Stir in the garlic, bell pepper, squash, tomato paste, bouillon cube, and water. Bring to a boil, then reduce the heat, cover with a lid and simmer for about 10 minutes. Add the beans and simmer for another 10 minutes. Serve over white rice, garnished with cilantro.
  • In a medium pot, bring the water to a boil over high heat and add the oil and salt. Stir in the rice, cover with a lid and let cook over medium-low heat for about 20 minutes. Lower the heat for the last 5 minutes. The rice should be soft and fluffy.

1 lb flank steak
2 tablespoons vegetable oil
4 garlic cloves
2 teaspoons ground cumin
6 roma tomatoes
2 medium onions
2 beef bouillon cubes (prefer Maggie or Knorr brand)
2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat the oil in a skillet and sauté flank steak until browned.
  • Remove from the skillet and sauté chopped tomatoes, thinly sliced onions, minced garlic and cumin until veggies are tender.
  • Add the flank steak, water, bouillon, salt and pepper.
  • Allow to simmer on low until tender and meat pulls apart with a fork.
  • Pull the steak apart into bite sized pieces.
  • Allow the sauce to cook down to desired thickness for serving on rice, or add more water depending on how much it has cooked down.

1 medium-size (about 8-ounces) dry salted codfish
1 onion cut into round slices
1 (8-ounce) can tomato sauce
2 cloves garlic, minced
1 green pepper, chopped
1/4 cup salad oil
1 sprig Chinese parsley or cilantro

  • Soak codfish overnight in cold water overnight. Drain water and add fresh cold water. Boil codfish for 1/2 hour. Pour out water. Fry codfish, onion, garlic, green pepper and tomato sauce in hot oil. Simmer for 1/2 hour. Add parsley or cilantro.

2-4 lb chicken breast, cut into bite sized pieces
about 4 medium tomatoes, chopped
4 medium potatoes, peeled and chopped
1 medium onion, peeled and chopped
1-2 clove garlic, peeled and chopped ( or use dried if you so choose)
1-2 jalapeno, seeded and sliced
1/4 tsp oregano
1/4 tsp basil
salt and pepper to taste
1-2 l chicken broth ( i use organic broth sold in liter sized cartons)
enough rice for your family

Steps:

  • 1. Melt butter in fry pan, add cut up chicken and saute until lightly browned. Set rice on too cook so it will be done.
  • 2. While the chicken cooks, peel and chop the potatoes, onion and garlic, dice the tomatoes. Seed and slice the jalapeno. Set ingredients aside in a bowl.
  • 3. When the chicken is ready,add the above ingredients along with the chicken broth and seasonings, let it simmer until the tomatoes are broken down and the potatoes are cooked through, this should take about 15 minutes or so depending on how much you make. Serve over the rice and enjoy :)
  • 4. Please remember that working with chili peppers can be harmful, ALWAYS wash your hands afterwards or use food safe gloves ( like the ones they use in restaurants) to protect your hands. If you don't have any gloves then wash hands thoroughly and do not touch your face (eyes, nose, etc.) for a while.

2 lbs boneless skinless chicken thighs (or your choice of cut)
3/4 teaspoon kosher salt, plus more
kosher salt, to taste
3 medium tomatoes, diced
1/4 cup canned chipotle chile in adobo
3/4 teaspoon ground cumin
3/4 teaspoon garlic powder (or 3 fresh garlic cloves, minced)
3/4 teaspoon fresh ground black pepper (plus more to taste)
3 tablespoons olive oil (or vegetable oil)
1 large onion, diced
taco shell (optional)
shredded lettuce (optional)
diced tomato (optional)
shredded cheddar cheese (optional)

Steps:

  • Put the chicken in a saucepan with salted water to just cover. Bring to a simmer and cook until just cooked through, about 25 minutes. Let cool, then shred the chicken.
  • Place the tomatoes, chipotle sauce, cumin, garlic powder, 3/4 teaspoons pepper, 3/4 teaspoons salt, and 1 cup water in a blender. Puree until smooth.
  • Heat the oil in a saucepan over medium heat. Add the onion, and cook until the onion is golden brown, about 7-10 minutes.
  • Add the chipotle mixture and bring to a simmer. Add the chicken and simmer unil the sauce thickens and the chicken is tender, about 15 minutes. Season with salt and pepper to taste.
  • Serve the pollo guisado in crisp taco shells with shredded lettuce, diced tomato and shredded Cheddar cheese. Enjoy!

32 ounces chicken thighs, boneless
3 tomatoes, diced
2 ounces chipotle hot sauce, canned
1/4 tablespoon garlic, chopped
14 tablespoons ground cumin

1 onion, diced

Steps:

  • boil the chicken for 25 minutes or until cooked. Set aside.
  • In a blender combine the tomatoes, chipotle sauce, garlic, cumin, pepper, salt and add 9 ounces of water and blend for a few seconds.
  • In a saucepan add the vegetable oil and onions and cook for 3 minutes or until the onions turn golden.
  • Add the chipotle mixture and the chicken to the saucespan with the onions and cook over medium heat 15 minutes.

THE KEY TO THIS DISH IS MAKING SURE YOU LET IT MARINADE LONG ENOUGH! :)
1 3-4 pound whole chicken cut into pieces
3 Tbsp fresh lime juice (roughly 2 limes squeezed)
1 fresh whole lime (to squeeze over dish before serving)
1 yellow bell pepper
1 cubanelle pepper
you can use 2 green peppers in place of the peppers listed above
1 large onion (i use white sweet onion) use what you like
2 small tomatoes chopped (i use roma) or 1 can diced tomatoes
1/4 c olives pitted (i use whole spanish but you can use sliced)
2 stalk(s) fresh cilantro with leaves
3 clove garlic minced
1 tsp dried oregano
1 tsp salt
2 Tbsp tomato paste (if you don't use canned tomatoes)
3 Tbsp goya brand original adobo seasoning (or what you use)
4 Tbsp oil
1-2 Tbsp sugar

Steps:

  • 1. Cut chicken up leaving skin on and bone in. Wash and clean each piece well. If you prefer you can remove the bones from the breast and thighs but leave the skin on. You can use boneless skinless breast if like but the flavor will not be as strong.
  • 2. Rub the chicken with the lime juice.
  • 3. Add chicken to a large bowl and add peppers, tomatoes, onions and season with oregano, garlic and a pinch of salt. Liberally sprinkle with the adobo. Marinade for at least an hour or up to 3 days in the fridge depending on how fresh your chicken is. I leave mine over night.
  • 4. When finished marinading in a large pot heat the oil over medium-high heat, sprinkle in the sugar and let it brown,(the sugar is to caramelize the chicken skin) then put the chicken in the pot and brown dark on both sides. Make sure to set the vegetables and liquid aside to use later. Saute until the chicken has a nice dark caramel color to it. Add 2 tbsp of water, cover and simmer over medium heat until the chicken looks is tender adjusting water when necessary, add everything else EXCEPT tomato paste including vegetables and marinade cover again and simmer adding more water if you need it to maintain about 1 to 1 1/2 inches of liquid.
  • 5. When the veggies are soft mix 1/2 cup water and tomato paste together and pour into pot. Stir slightly around the chicken pieces taste and adjust salt and pepper to taste. Add 2 cilantro stalks with leaves, leave them whole just lay them in the sauce on top. Squeeze one lime over everything and cover pot. Reduce heat to low and simmer until a thin sauce is made about 30 minutes.
  • 6. I serve this the way my mom does. Over yellow rice topped with black beans and then chicken on top covered with the cooked veggies and sauce DELICIOUS!!! Ohhhh and the sauce makes the best bread dipping sauce!

4 red snapper steaks
4 tablespoons oil
3 jalapenos (sliced lenghwise in 8ths, stem removed)
6 roma tomatoes (roughly chopped)
1 medium white onion (roughly chopped)
6 garlic cloves (minced)
2 cups water
1/2 fish bouillon cube
salt and pepper
1 lime

Steps:

  • Start by heating the 4 tbsp of oil in a large pot on medium high heat.
  • Sprinkle each steak with salt and pepper and place them in the hot oil. As the fish is sauteing squeeze small amounts of lime juice onto each piece. This will keep the fish skin from becoming slimy during the cooking process.
  • Once the fish has sauteed on one side for 4 minutes carefully turn each piece onto the other side and saute an additional 2 minutes. Continue until all sides have been cooked.
  • Remove the fish onto a platter and set aside. Add the garlic, onions, and jalapenos into the oil that the fish cooked inches Saute the mixture for 5 minutes or until the onion has softened and translucent.
  • Next, add the tomatoes and saute for an additional 5 minutes. Add the water and fish flavored bouillon cube. Cover and bring to a boil. Let the tomatoes boil for 10 minutes and then turn the heat down to medium low.
  • Add the pieces of fish back into the pot and cover. Cook on medium low (low boil) for an additional 15 minutes. The dish is fully cooked once the fish flakes easily off of the bones.
  • Enjoy!
  • Note; If you love cilantro like I do you can dice up a handful and add it into the pot the last 2 minutes of cooking.
