- Slice potatoes in half lengthwise and pierce the meat using a fork or knife. Preheat oven to 350 degrees. While preheating oven add 3-4 tablespoons butter or margarine to a baking sheet or baking dish and melt in oven (for 4 potato halves, you should have a liberal amount of butter or margarine coating the bottom).
- When butter is melted remove pan and add a liberal amount of garlic salt. Add parsley, and place potatoes face down in butter.
- Bake until potatoes are tender and meat of potato is browned (approximately 35-40 minutes for medium sized Russet Potatoes).
- Can be done in Microwave (approximately 15 minutes but check frequently).

- Preheat oven to 375ºF. While oven heats, scrub potatoes under cold water, dry with a towel and pierce a few times on each side with a fork. Place potatoes on a microwavable plate and microwave for 6 minutes, turning halfway through the process.
- Brush potatoes with olive oil and sprinkle with coarse salt, pressing it gingerly against the potatoes (be careful, they are already hot). Bake on an open oven rack, with a lined baking sheet on a rack below (we like using our nonstick Cookina baking sheet liners, but foil or parchment will also work); the potatoes will drip just a little oil or moisture from the pierced potato itself, and you don't want this to burn onto the oven floor.
- Bake potatoes for 25 to 30 minutes, until they pierce easily with a sharp knife and the skins are crisp. Serve with your favorite potato toppings.

- Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
- Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
- Put potatoes in a baking dish. Fan them slightly.
- Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
- Bake potatoes at 425 degrees for about 50 minutes.
- Remove from oven. Sprinkle with cheeses.
- Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
- To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
- Sprinkle with melted butter and herbs.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
- Sprinkle with salt, and serve.
- Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
- After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.
