¼ cup chicken stock, or as needed
2 (8 ounce) fillets halibut
1 teaspoon lemon juice

1 cup mayonnaise
3 tbsp sweet chili sauce
1 l/2 cups wasabi peas, chopped roughly by hand or in a food processor

Steps:

  • Preheat oven to 400F. Cut halibut into 6 equal pieces. Mix the mayonnaise and the sweet chili sauce together in small bowl. Put the halibut pieces, evenly spaced, onto a baking sheet lined with parchment paper. Spread mayonnaise mixture evenly on the top of each piece of halibut. Press the chopped wasabi peas firmly into the mayonnaise and sweet chili coating on the halibut. 1/4 cup tomato fondue or stewed tomato
1/4 cup odessa style mushrooms in sour cream (mushroom duxelles)
3 ounces butter at room temperature
2 tablespoons parmesan cheese , grated
1/4 cup bread crumbs
Sauce of Fresh Peas (recipe follows)
Candied Onions (recipe follows)
2 large Spanish onions, sliced
1 tablespoon butter
1 clove of garlic, mined
2 tablespoons shallot, minced
1 cup fish stock
1/4 cup cream
1 cup fresh peas
1 tablespoon butter

Steps:

  • Season the fish with salt and fresh ground pepper. Spread a layer of tomato fondue or stewed tomato on the fish. Then a layer of the mushroom duxelle and on top, the mixture of butter, parmesan cheese and bread crumbs. Bake at 375 degrees in oven for 12 to 15 minutes or until the fish is done and the crust is golden. TO SERVE: Place the Candied Onions in the center of the plate and place the fish on top. 1/4 pound bacon
1 to 3 tablespoons extra virgin olive oil or butter
1 1/2 to 2 pounds halibut
Salt and pepper to taste
15 spring or pearl onions, trimmed and peeled, or 1 large white onion, chopped
1 pound small peas, fresh or frozen, or use fresh snap or snow peas, trimmed
2 cups chopped heart of romaine lettuce
1/2 cup chopped mint leaves

Steps:

  • If using bacon, cut it into 1/4-inch bits, and render it with 1 tablespoon olive oil over medium high heat in a large skillet, which can later be covered. Stir until crisp. Remove with a slotted spoon, and reserve. If using olive oil or butter, put 3 tablespoons in skillet over medium high heat.
  • Brown fish in fat quickly, just a couple of minutes to a side, sprinkling it with salt and pepper as it browns. Remove, and set aside.
  • Add onions to pan, and cook, stirring occasionally, until soft, about 5 minutes. Add peas and lettuce, and cook, stirring, until glistening. Add a little more salt and pepper. Return fish to pan, simply resting it on top of peas-lettuce mixture. Turn heat to medium-low, cover, and cook gently until fish is done. 1/4 cup distilled white vinegar

1 seedless cucumber (usually plastic-wrapped)
8 oz shredded red cabbage (4 cups; from a 10-oz package)

Steps:

  • Prepare fish:
  • Put oven rack in upper third of oven and preheat oven to 400°F. Line a shallow baking pan with foil.
  • Pat fillets dry, then arrange in baking pan. Sprinkle salt all over fillets. Stir together wasabi paste and mayonnaise in a bowl, then spread tops of fillets with half of mayonnaise and sprinkle with half of panko. 2 fresh tuna steaks, 1-inch inch thick
5 ounces wasabi peas
1 egg
1 cup milk
1 cup flour
salt
canola oil

Steps:

  • Cut each steak in half. Wash and dry them well and wrap in plastic wrap tightly. Place in freezer for about 45 minutes.
  • Mix the egg and milk together.
  • Crush the peas with a mortar and pestle until they have the consistency of coarse salt. (I used a rolling pen and rolled it over the peas in a plastic bag.).
  • Unwrap each piece of tuna. Coat it in the flour, then dip in egg/milk mixture, then roll in the crushed peas. Place on a plate and allow to rest for 10 minutes.
  • Preheat a heavy cast iron frying pan on low heat. After the 10 minute resting period of the tuna, add 3 tablespoons of oil and turn the pan to high heat. Allow to heat about a minute then add the tuna.
  • With heat on high, saute tuna 1 minute on each side, including the sides.
  • Serve immediately.
