From Southern Living April 2007. I'm saving this recipe until I have fresh tomatoes from the garden. Serve with a salad for a complete meal that comes together quickly. Notes from SL, do not use deli ham due to the moisture content. You can also use leftover ham in this recipe.

8 ounces cooked ham, diced
4 green onions, sliced
9 inches unbaked pie shells, frozen
1 tablespoon Dijon mustard
1 cup mozzarella cheese, shredded
2 medium plum tomatoes, thinly sliced
1 large egg
1/3 cup half-and-half
1 tablespoon fresh basil, chopped
1/8 teaspoon pepper

Steps:

  • Preheat the oven to 425 degrees.
  • Saute the ham and onion over medium heat until the ham is brown and all the liquid evaporates.
  • Brush the bottom of the pie shell with mustard.
  • Sprinkle 1/2 c mozzarella over the mustard.
  • Put the ham and onions evenly on top of the cheese.
  • Place a single layer of tomatoes on top of the ham.
  • Combine the egg and half-and-half; beat with a fork until blended.
  • Pour over the tomatoes.
  • Evenly sprinkle the basil, pepper and remaining cheese on top.
  • Bake for 20-23 minutes or until lightly brown and set.
  • Cool on a wire rack for 20 minutes before cutting into wedges to serve.
  • Garnish slices with basil sprigs and sliced tomatoes if desired.

Pastry for 9-inch Single-Crust Pie
2 teaspoons Dijon style mustard

1 1/2 cups ground ham coarsely
5 tablespoons parsley minced fresh
3 tablespoons onions minced
2 tomatoes peeled, cored, and thickly sliced
Salt and freshly ground pepper to taste
1 1/2 cups sharp cheddar cheese shredded
3/4 cup mayonnaise real
2 tablespoons crackers crumbs
1/2 teaspoon basil dried, crushed

Steps:

  • * Prepare and prebake pie shell as directed. Remove from oven and reduce heat to 400° F. Spread mustard over inside of crust and allow to dry. Filling:*In small bowl, combine ham, 1 tablespoon parsley, and 1 tablespoon onion spread in baked pie shell. Cover with tomato slices sprinkle lightly with salt and pepper. In a small bowl, blend cheese, mayonnaise, remaining 4 tablespoons parsley, remaining 2 tablespoons onion, cracker crumbs, and basil. Spread cheese mixture on filling. Bake for 30 to 40 minutes until hot and bubbly. Serve immediately.

1 refrigerated pie crust, softened as directed on box (from 15-oz. box)
3 eggs
3/4 cup milk
2 tablespoons all-purpose flour
1/4 cup grated parmesan cheese
1 cup finely chopped cooked ham (about 6 oz.)
1 medium tomatoes, cut in half, seeded and cut into thin strips
3 tablespoons chopped green onions
1 cup shredded cheddar cheese (4 oz.)

Steps:

  • Heat oven to 400.
  • Place pie crust in 9-inch glass pie plate as directed on box for one-crust filled pie. Do not prick crust. Bake 8 to 10 minutes or just until edge begins to brown (if crust puffs up in center, gently push down with back of wooden spoon).

2 garlic cloves, minced
2 tablespoons vegetable oil
4 medium tomatoes, peeled, seeded and chopped

350g new potatoes
375g ready-rolled puff pastry
100g crème fraîche
50g thinly sliced ham
125g brie or camembert cheese, halved and sliced
green salad , to serve (optional)

Steps:

  • Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
  • Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
  • Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.
