8 large eggs
2 green onions, sliced
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons butter
4 ounces sliced deli ham, cut into strips
4 flour tortillas (8 inches), warmed

Steps:

  • In a large bowl, whisk the first 5 ingredients. In a large skillet, heat butter over medium heat. Add ham; cook and stir 1-2 minutes or until lightly browned. 3 egg whites
6 slice deli fresh shaved smoked ham, chopped
2 whole wheat tortillas
1/2 c shredded cheese of choice
