Another simple (and fast) yet tastey recipe from my husband's childhood. When I asked Curt the name of this particular recipe, he said, "Hamburger and Kidney Beans". When I asked again, he gave me the same answer. I wanted it to have some really cool name that I could use here on the site, but this is it: Hamburger and Kidney Beans. His mom would cook this and would just serve it plain. It was Curt that added the Mashed Potatoes later. I omitted the recipe for instant mashed potatoes, assuming that you all know how to make them to your own likeing. Of course you can always use real mashed potatoes, but in a time crunch you can use instant, or this would be great for left over mashed as well. You can adjust this recipe easily to fit your family size.

2 (16 ounce) cans dark red kidney beans

1 ½ pounds ground beef
1 ½ cups chopped onion
½ cup chopped bell pepper
1 clove minced garlic
1 teaspoon chili powder
1 teaspoon salt
1 ½ cups water
¾ cup uncooked white rice
1 (16 ounce) can kidney beans, rinsed and drained
1 (14.5 ounce) can whole peeled tomatoes
¾ cup grated American cheese
⅓ cup chopped black olives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir onion, bell pepper, garlic, chili powder, and salt with the ground beef; cook and stir until the onion is softened, about 5 minutes.
  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.

1 15 oz can Dark red kidney beans, juice and all
0.25 tsp Chili powder
0.25 tsp Garlic powder
0.25 tsp Onion powder
3.0 dash Salt
3.0 dash Pepper, black

Steps:

  • Add tsp butter and chopped onion to pot over medium heat. Add browned hamburger meat and can of beans, juice and all. Turn to low and simmer 10 minutes, stirring occasionally. Serve over cooked starch of choice. I prefer instant brown rice.

1 medium onion, chopped
1 medium green pepper, chopped
1 (10 ounce) can tomato soup
1 (14 ounce) can kidney beans, undrained
1 tablespoon Worcestershire sauce
1/4-1/2 teaspoon pepper
1 lb cooked noodles

Steps:

  • In large skillet cook ground beef, onions and green pepper till beef is no longer pink and onions and peppers are tender.
  • Drain excess fat.
  • Stir in soup, kidney beans, Worcestershire sauce and pepper.
  • Bring to boil, simmer for 5 to 10 minutes for flavors to meld.

1-1/2 pounds ground beef
1/4 cup chopped onion
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 teaspoon salt
1 teaspoon chili powder
1 bay leaf
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper
2 cups cooked long grain rice

Steps:

1/2 pound bacon or more if you like bacon like I do
1 chopped onion
1 can drained dark red kidney beans
1 can drained butter beans
1 tall can bushes baked beans
3/4 cup brown sugar
1/2 cup ketchup
2 teaspoon vinegar
1 teaspoon salt
1 teaspoon dried mustard

  • Slice the bacon into about 1" pieces. In a skillet over medium heat, brown the hamburger, bacon and chopped onion.
