HAMBURGER POTATO CHEESE CASSEROLE

Hamburger Potato Cheese Casserole image

The name just about says it all. If you are looking for something exotic, interesting or spicy, you would be happier moving on to the next recipe. If you need something that will be ready quickly, or is low fat, this is not the dish for you. You also usually have to soak the pan afterward to clean up. BUT, if sometimes you or your family members just want some hamburger and cheesy potatoes, and you have a couple of hours before you need to have dinner ready, you might enjoy this. After all of the fun and interesting things I make for my family - which they enjoy - this is what they ask for. This is a recipe my mother asked for; this is what my son wants to eat so he feels like he's been home during school holidays; my picky 7 year old eats an adult-sized portion of this. My husband is always happy to eat it. Adapted from the More with Less cookbook - can also be made with other meats/cheeses.

Time 1h55m

Yield 6 serving(s)

Number Of Ingredients 11

5 large russet potatoes, peeled and sliced about 1/4-1/2 inch thick
2 -3 tablespoons chopped onions
1 lb ground beef (really lean is preferable)
salt and pepper
2 cups milk (I use skim)
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces shredded sharp cheddar cheese
ketchup (optional condiment)

Steps:

  • I use a 2 1/2 quart covered casserole dish for this. This will stick unless you have a great non-stick baking dish - I never grease the pan though because of all the fat that's already in this.
  • Preheat oven to 350.
  • Brown hamburger and onion.
  • Place a layer of sliced potatoes in casserole dish, top with half of hamburger/onion mixture. Salt and pepper to taste (kind of depends on how salty your cheese sauce is - you can always salt it later if it needs it).
  • Repeat layering of potato slices and hamburger mixture (and salt and pepper if desired).
  • Make Cheese sauce:.
  • Melt 3 T butter in saucepan over med-high heat.
  • Add 3 T flour, and the salt and pepper. Stir quickly to blend.
  • Add 2 cups milk; stir with whisk to incorporate butter/flour mixture.
  • Reduce heat, stir till thickened and bubbly.
  • Remove from heat and add shredded cheddar. Stir until cheese melts.
  • Pour cheese sauce over hamburger and potatoes in baking dish. Push potatoes around to let cheese sauce into all of the crevices so it's well coated.
  • Cover and place in oven. Bake for about 1 1/2 hours, till potatoes are tender and top is browned. I like to take off the lid for the last 20 minutes or so to brown the top a bit.
  • Even with the leanest ground beef, this can get little pools of grease on top - I just spoon these off. It doesn't mean the whole thing is greasy - just cheesy.
  • My family members consider generous amounts of ketchup a necessary addition to this dish. I like it fine by itself (ok, maybe a spot of ketchup on the side).

JEANNIE'S FAMOUS POTATO HAMBURGER CASSEROLE

Jeannie's Famous Potato Hamburger Casserole image

This is something I made up that my family loves. When making it for just my hubby and I, I will add bell peppers and some banana hot peppers to it - really yummy then, but the boys don't like it that way.

CHEESY HAMBURGER & POTATO CASSEROLE

Cheesy Hamburger & Potato Casserole image

This has layers of sliced potatoes, cheddar cheese and hamburger. It's creamy and easy, with lots of cheese!! After reading the reviews, I think I didn't state clearly enough that the potatoes need to be very thinly sliced-almost shaved. I've made this tons of time and my potatoes are always done. So slice 'em thin!

Tips and Conclusion

Cooking a hamburger casserole with potatoes is a delightful culinary experience that combines the hearty flavors of ground beef, the softness of potatoes, and a medley of vegetables. To ensure success in creating this dish, here are some essential tips to follow:

  • Choosing the Right Beef: Opt for lean ground beef, preferably with a fat content of around 85%. This will provide a balance between flavor and healthfulness.
  • Seasoning the Beef: Season the ground beef generously with salt, pepper, garlic powder, onion powder, and paprika before cooking. This will enhance the beef's flavor and add depth to the casserole.
  • Cooking the Beef: Cook the ground beef in a large skillet over medium heat until it's fully browned and no longer pink. Drain off any excess grease to ensure a healthier dish.
  • Preparing the Potatoes: Peel and dice the potatoes into bite-sized pieces. Soaking them in cold water for a few minutes before cooking will remove excess starch and prevent them from sticking together.
  • Layering the Casserole: Layer the bottom of a greased casserole dish with half of the cooked ground beef, potatoes, and frozen vegetables. Repeat the layers, ensuring that the top layer consists of the remaining ground beef mixture.
  • Adding the Cream of Mushroom Soup and Milk: Pour the cream of mushroom soup and milk over the layered ingredients in the casserole dish. This will create a creamy and flavorful sauce that binds the casserole together.
  • Baking the Casserole: Preheat the oven to 350°F (175°C) and bake the casserole for 30-35 minutes, or until the potatoes are tender and the casserole is bubbly.
  • Garnishing and Serving: Before serving, garnish the casserole with grated cheddar cheese or a combination of mozzarella and Parmesan cheese. Place it back in the oven for a few minutes until the cheese is melted and bubbly.

Conclusion

Creating a hamburger casserole with potatoes is a delightful culinary endeavor that offers a hearty and comforting meal. By following the tips provided, you can ensure a successful and flavorful dish that will satisfy the taste buds of your family and friends. So, gather your ingredients, preheat your oven, and embark on this culinary journey to create a delicious hamburger casserole with potatoes!
