1 (15.5-ounce) can chickpeas, rinsed and drained

Steps:

  • Heat the oven to 450 degrees. On a rimmed baking sheet, combine the chicken and 2 tablespoons oil. Season with salt and pepper and toss to coat. Arrange the chicken in an even layer, skin side up, and roast until golden and cooked through, 30 to 40 minutes, depending on the size of the chicken breasts. Transfer to a cutting board and let rest for 10 minutes. Carve the breast off off the bone, then slice to serve. Discard bones or reserve for making chicken stock.
  • While the chicken rests, heat 2 tablespoons oil in a small saucepan over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened, 3 minutes. 2 tablespoons canola oil
8 chicken thighs
Salt and freshly ground black pepper
2 tablespoons olive oil
1 large yellow onion, peeled, halved, and thinly sliced
2 cloves garlic, finely chopped
1 tablespoon ras al-hanut*
Large pinch saffron, soaked in 1/4 cup warm water
1 cinnamon stick
1 1/2 cups canned diced tomatoes, drained (15-ounce can)
1 1/2 cups canned chickpeas, rinsed and drained (15-ounce can)
3/4 cup dried apricots, sliced into half moons
Harissa Sauce, recipe follows
Chopped flat-leaf parsley, for garnish
Chopped fresh cilantro leaves, for garnish
1/2 cup creme fraiche
1 tablespoon harissa**
Salt

Steps:

  • Preheat oven to 400 degrees F.
  • Heat canola oil in a large Dutch oven or a tagine over high heat. Season chicken with salt and pepper on both sides and place in the hot pan, skin side down, in batches if needed; cook until golden brown. Turn the thighs over and cook for 2 minutes longer. Remove chicken to a plate.
  • Remove all but 2 tablespoons of the oil from the pan then add the olive oil and heat over medium heat. Add the onions and cook until soft. Add the garlic and cook for 30 seconds. Add the ras al-hanut and cook another 30 seconds. Add the saffron with the soaking liquid, cinnamon stick, tomatoes, chickpeas, and apricots and bring to a simmer. Nestle the chicken into the mixture and bring to a simmer. Cover and cook on the stovetop or in the oven for 35 to 40 minutes or until the chicken is tender. Do not remove the lid to check on the chicken until this time. Garnish each serving with a dollop of Harissa Sauce, parsley and cilantro.
  • Whisk all ingredients together in a small bowl and let stand at least 30 minutes in the refrigerator before serving.

1 teaspoon ground cumin
1 teaspoon salt

2 tablespoons olive oil
1 fennel bulb, trimmed and thinly sliced

Steps:

  • Mix paprika, cumin, salt, cayenne, cinnamon, turmeric, and black pepper together in a small bowl.
  • Pat chicken thighs dry and place them in a resealable plastic bag. Sprinkle paprika mixture over chicken thighs; massage the bag to coat chicken evenly.

  • Preheat oven to 425°F. Heat oil in a large ovenproof skillet over medium-high heat. Season chicken with salt and pepper. Working in 2 batches, cook until browned, about 5 minutes per side; transfer to a plate.

2 red bell peppers
1 tablespoon cumin seeds
2 teaspoons coriander seeds
2 teaspoons fennel seeds
2 teaspoons caraway seeds
4 red dried chiles, seeds left inside
3 garlic cloves, smashed and finely chopped
1/4 cup tomato paste
1/2 cup extra-virgin olive oil
Kosher salt
1 chicken, cut into 8 pieces, or 8 chicken thighs and/or legs

Steps:

  • Put the red peppers on the grill and char them until they are black on all sides. Put the peppers in a bowl and cover with plastic wrap. When cool enough to handle, scrape the charred black skin off the peppers and remove the stem and seeds. Coarsely chop and reserve. This can totally be done ahead.
  • Put the cumin, coriander, fennel and caraway in a dry saute pan and toast them until they become very aromatic. Grind all the spices into a coarse powder in a spice grinder.
  • Coarsely chop the dried chiles, toss them into the bowl of a food processor and pulse to pulverize. Add the toasted ground spices, the roasted red peppers, chopped garlic and tomato paste. Puree until the mixture is smooth. Add 1/4 cup of the olive oil and pulse to combine. Add in another 1/4 cup of olive oil and pulse again. Season with salt, to taste, if needed. Store in an airtight container.
  • Toss the chicken parts liberally with the harissa and let sit at room temperature up to 2 hours, or overnight or even a few days in the refrigerator.
  • Preheat the grill to medium.
  • Put the chicken on the grill and grill for 8 to 10 minutes on each side. You may have to move the chicken around, or flip it over a couple of times to prevent burning. You may also want to brush it a couple times with the leftover harissa, just remember it is pretty spicy! Remove the chicken from the grill and let it rest for 5 to 10 minutes before serving.

Steps:

  • Season chicken thighs well with salt and pepper. In a heavy-bottomed skillet, heat oil over medium-high heat. Add chicken thighs skin-side down and cook undisturbed until nicely browned, about 5 to 6 minutes. Flip and brown the other side, about 4 to 5 minutes more. Transfer to a plate and set aside.

I used a mortar and pestle to form the spice paste, but you can easily use a small bowl and the back side of a spoon. Be sure to pair it with sides that counteract the heat. 4 pounds chicken wings, split at the joint, wingtips removed and discarded
3 teaspoons baking powder
Kosher salt and freshly ground pepper
10 dried New Mexico chiles (2 ounces), stems removed
8 dried guajillo chiles (1 1/2 ounces), stems removed
1/2 teaspoon whole coriander seeds
1/2 teaspoon whole cumin seeds
1/4 cup vegetable oil
6 cloves garlic, roughly chopped
Juice of 1 lemon (about 2 tablespoons)
2 oranges
1/2 cup salt-cured black olives, pitted and halved
1/3 cup fresh mint leaves, thinly sliced
2 tablespoons extra-virgin olive oil
1 bunch radishes, greens discarded

Steps:

  • Put one-third of the wings in a large bowl, sprinkle with 1 teaspoon baking powder and toss until evenly coated. Use tongs to spread the wings on a wire rack set over a rimmed baking sheet. Repeat with the remaining chicken wings and baking powder in two batches. Liberally sprinkle both sides of the wings with salt and pepper and refrigerate for at least 1 hour, or preferably overnight.
  • Preheat the oven to 450 degrees F. Meanwhile, make the harissa: Tear open the chiles and discard the seeds. (You may leave the seeds in if you prefer a spicy harissa.) Tear the chiles into large pieces and place them in a medium bowl. Pour 4 cups boiling water over the chiles and let stand until softened, about 20 minutes.
  • Put the coriander and cumin seeds in a small skillet and cook, swirling often, over medium heat, until the seeds are fragrant and lightly toasted, 2 to 3 minutes. Transfer the spices to a blender, add the oil, garlic, lemon juice and 1 tablespoon kosher salt, then puree until smooth. Using tongs, add the chiles to the blender along with 1 cup of their soaking liquid (discard the rest) and puree until very smooth, about 2 minutes on high. Season the harissa with pepper and set aside while you finish the wings.
  • Bake the wings, turning once halfway through, until golden brown and cooked through, 40 to 45 minutes.
  • For the salad: Use a vegetable peeler to remove the zest from 1 orange, avoiding the white pith, and cut it into very thin strips; transfer to a medium bowl. Using a knife, remove the white pith from both oranges, then cut the fruit crosswise into 1/4-inch-thick rounds. Add the orange rounds to the bowl along with the olives, mint and oil and toss to combine. Slice the radishes into thin wedges and toss with the orange mixture; let stand for 15 minutes.
  • Transfer the hot wings to a large bowl and pour 1 1/2 cups of the harissa over, tossing to coat evenly. Transfer the wings to a platter and serve with the orange, olive and radish salad on the side. Serve the remaining harissa on the side for dipping or reserve for another use.

Steps:

  • Preheat the oven to 425 degrees F.
  • Whisk together the harissa, honey and lemon juice in a bowl. Add chicken and mix until coated.
  • Skewer the chicken evenly among 8 wooden skewers and set aside.
  • Mix together the squash, zucchini, onion, mushrooms, olive oil, cumin and salt and pepper until completely combined.
  • Place a 1 1/2 to 2 feet long sheet of Reynolds Wrap® Aluminum Foil on a table and place 1/4 of the vegetables in the center of the foil. Place 2 chicken skewers on top of the vegetables. Fold up the ends and then the outside of the foil to create a foil packet.
  • Repeat the process 3 more times and place the foil packets on a cookie sheet.
  • Bake in the oven at 425 degrees F for 20 minutes and then open the foil packets and cook for a further 15 minutes or until the chicken is lightly browned and cooked throughout.

3 red bell peppers
3 red chile peppers such as Fresno or Holland finger peppers
2 tablespoons olive oil
8 boneless, skinless chicken thighs
Salt and pepper

3 cloves garlic, chopped
1 bay leaf
1 small piece cinnamon stick or a pinch ground cinnamon
1 inch fresh ginger root, peeled and grated or pasted
1 onion, finely chopped
2 teaspoons smoked sweet paprika (2/3 palmful)
1 teaspoon ground cumin (1/3 palmful)
White wine vinegar
2 1/2 cups chicken stock
1 tablespoon butter
1 1/4 cups basmati or other white long grain rice
Thinly sliced scallions, for garnish

Steps:

  • Char the bell and chile peppers under a hot broiler until the skins are evenly blackened. Place in a bowl and cover to cool to handle. Wipe the charred skins away with paper towels and seed the peppers. Reserve for later use.
  • Heat a large skillet over medium-high heat, add the oil. Sprinkle the chicken thighs with salt and pepper on both sides. Add the chicken to the hot oil and brown on both sides, 4 to 5 minutes. Remove the chicken to a plate and reduce the heat a bit. Add the garlic, bay leaf, cinnamon, ginger, onions, paprika, cumin and some salt and pepper, and cook to soften a bit, stirring occasionally. Add a splash of vinegar.
  • Place the peeled peppers in the bowl of a food processor with 1 cup of the stock, and process until pureed. Add the puree to the pan, thin with about 1/2 cup water and slide the chicken back into the pan. Reduce the heat to a simmer and finish cooking the chicken through. Turn off heat and cover until you serve.
  • To serve, heat the remaining 1 1/2 cups stock (or 1 cup stock and 1/2 cup water) and the butter to a boil with the rice. Bring to a bubble, then reduce the heat to low and cover. Simmer the rice for about 15 minutes. Turn off the heat and let stand 5 to 10 minutes, then fluff with fork.
  • In shallow bowls, top the rice with the chicken in spicy sauce, garnish with scallions before serving.

1/2 teaspoon caraway seeds
1/4 teaspoon cumin
1/4 teaspoon coriander seeds
1 teaspoon dried oregano
1/4 teaspoon sesame seeds
4 ancho chiles
4 guajillo chiles, may substitute dried hatch chiles
3 cloves garlic
1 teaspoon kosher salt
1 teaspoon Espelette pepper
2 tablespoons tomato paste
1 teaspoon extra-virgin olive oil
Freshly ground black pepper
1 cup garlic cloves, peeled
1 cup extra-virgin olive oil
1 strip lemon peel
1 bay leaf
1 tablespoon white wine vinegar
1 cup unsalted butter
2 tablespoons Dijon mustard
Freshly ground black pepper
1 lemon, halved
2 cups wild arugula, washed and dried
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar

Steps:

  • Light the grill: Place a chimney starter on the grate of a charcoal grill. Add newspaper in the bottom, then fill with charcoal. Light the newspaper, which will light the charcoal. Allow charcoal to burn for 30-45 minutes; when the charcoal is mature with ashed-over gray embers, remove the chimney and spread the charcoal around the bottom of the grill. Place the grill plate on top (the coals will be very hot, so use oven mitts).
  • Harissa paste: In a cast-iron skillet, toast caraway, cumin, coriander, oregano and sesame seeds over medium heat until they're aromatic, stirring occasionally, 1-1½ minutes. Place the toasted spices in a mortar. In the same skillet, toast the peppers over medium heat until they begin to "balloon up," 3-4 minutes. Cut off the stem ends of the chiles and remove the seeds by tapping them out. Tear the chiles into strips and place in a bowl. Cover with hot water, and let stand for 5-10 minutes. Meanwhile, add the peeled garlic and salt to the spice mixture and use the pestle to grind everything together. Stir in the Espelette pepper, followed by the tomato paste. Drain the chiles, squeezing out the water; roughly chop and add to the mortar bowl. Pound and grind until the paste is thick and chunky. Slowly drizzle in the olive oil, enough to just saturate the paste. Add more salt to taste, and a few grinds of black pepper; stir a bit more to combine. Set aside.
  • Prepare the chicken for grilling: Place the chicken on a rimmed baking sheet fitted with a rack. Tuck the wings back on themselves, then use poultry scissors to cut out the backbone; discard or reserve to make stock. Turn the chicken over, skin side up, and smash the keel bone (breastbone) of the chicken to flatten it out. Flip the chicken skin side down and make a small incision on the top of each inner thigh, which will help the heat penetrate. Dry the chicken thoroughly, then apply the harissa paste on both sides, finishing with the chicken skin side down. Place first skewer through the chicken, beginning at the top part of the thigh, through the bone in the middle of the chicken, to the top part of the breast, finishing just below the wing. Repeat on the other side. (It's important the skewers are fitted below the bone, so they stay in place during grilling.) Refrigerate uncovered, 3 hours to overnight.
  • Make the garlic confit/butter mop: For the garlic confit, preheat oven to 300 degrees F. In a small saucepan add the garlic cloves, olive oil, lemon peel, and bay leaf, making sure garlic is submerged. Cover and bake until the garlic is tender and golden, 1-1½ hours. For the butter mop, in a small saucepan over medium-high heat, add half of the garlic confit, breaking up the garlic. (The remainder of the confit will last in a jar, refrigerated, for up to two weeks.) Let it sizzle, 2-3 minutes. Add the vinegar and cook until it's dry and the mixture becomes a thick paste. Add butter, 2 tablespoons at a time, whisking with each addition. Bring the butter to a boil, then reduce heat and cover. Whisk in the mustard and a few grinds of black pepper, then set aside until it's time to baste the chicken. (Note: Butter mop can be made a day ahead. Store, covered, at room temperature.)
  • Grill the chicken: Season the chicken with salt and pepper. Move the pre-heated coals to one side of the grill, then place two bricks on the grate, long side down. Rest the skewers on the bricks so that the chicken is suspended above, but not touching, the grill. This method of indirect cooking will yield a tender, juicy, evenly cooked chicken. Cover and cook 45 minutes, basting with butter mop every 10 minutes.
  • Finish the chicken: Chicken is done when a thermometer reads 165 F. Alternatively, wiggle the leg; if there is a slight give, the chicken is done. Let rest for several minutes on a cutting board.While chicken is resting, grill lemon halves, cut side down, on the hottest part of the grill. Put greens in a large mixing bowl. Once chicken has rested and the lemons are nicely caramelized, quarter the chicken and cut the breast portions in half. Remove to a serving platter. Squeeze juice from lemon halves directly onto the drippings on the cutting board. Add olive oil and drizzle vinegar on top of the lemon juice to make "Cutting Board Vinaigrette." With a knife or spoon, scrape vinaigrette from the board onto the greens. Toss and serve with the chicken.

CHICKEN CACCIATORE WITH HARISSA, BACON, AND ROSEMARY

4 strips of bacon
4 skinless, boneless chicken breasts or 8 skinless, boneless chicken thighs
Salt and freshly ground black pepper
1 bunch of green onions
5 ounces cremini or black poplar mushrooms
2 garlic cloves
2 sprigs of fresh rosemary
2 (14-ounce cans) of chopped tomatoes
A good glug (about 1/2 cup) of Madeira (or red or white wine or chicken stock)
1 tablespoon harissa paste (you can get it from most supermarkets) or 3 tablespoons tomato purée
Pinch of dried oregano
1 dried bay leaf
11 ounces of your favorite pasta (I love to use penne or rigatoni)
1-2 teaspoons sugar (optional)
Pat of butter (optional)
Small handful of fresh basil or parsley leaves (optional)
Special equipment:
Large sauté pan, scissors, kettle, large saucepan with lid, colander

Steps:

  • Put a drizzle of oil into a large sauté pan on a high heat. Use scissors to snip the bacon into bite-size pieces. Add them to the pan once hot and fry for a couple of minutes, stirring every so often, until they are browned.
  • While the bacon cooks, season the chicken pieces well with salt and pepper.
  • Remove the bacon from the pan, leaving the fat behind, and set aside to drain on paper towels. Put the chicken in, top side down, reduce the heat to medium and leave to cook for about 4 minutes.
  • Meanwhile, trim and finely slice the green onions (both the green and the white bits) and mushrooms and peel and finely chop the garlic. Run your fingers down the length of the rosemary stalks to release their leaves and finely chop them too. Set everything aside.
  • The chicken pieces should now be golden brown underneath, so flip them over and leave to cook on the other side for about 3 minutes.
  • Once the chicken is golden brown, turn down the heat to low and add the prepared mushrooms, garlic and rosemary, along with the tomatoes, Madeira (or red or white wine or stock), harissa paste or tomato purée and oregano, and crumble in the bay leaf.
  • Give it a good stir and then leave to bubble away for 15-20 minutes, stirring from time to time so that it does not stick to the bottom.
  • When the chicken dish is about halfway through cooking, add the reserved cooked bacon and green onions, then put the kettle on. Use the boiled water to cook the pasta in a large saucepan according to the package's instructions. Once it is cooked, drain the pasta and then return it to the pan with the lid on to keep warm if necessary.
  • Check to see if the chicken is cooked-if the juices run clear, it is ready. Taste the sauce, adding a little sugar and/or a pat of butter if the sauce is still a bit acidic from the tomatoes. Add a drizzle of water if the sauce is too thick and let it bubble away for a bit longer if too thin.
  • Divide the pasta among four plates, top with a piece of chicken breast or two thighs, spoon some sauce over and scatter with some ripped-up basil or parsley leaves, if using.

2 teaspoons grated lemon zest and 1 tablespoon fresh juice (from 1 lemon), plus 1 more lemon, peel and pith removed, cut into 1/8-inch rounds
1/4 cup coarsely chopped fresh ginger (from a peeled 2-inch piece)
1 cup packed cilantro
3 tablespoons extra-virgin olive oil
1 tablespoon harissa paste
Kosher salt
1 whole chicken (3 1/2 to 4 pounds)
2 small onions, cut into 1/4-inch rounds
1/3 cup Meyer-Lemon and Cardamom Marmalade or high-quality store-bought lemon marmalade, coarsely chopped

Steps:

  • In a food processor, pulse scallions, garlic, lemon zest, ginger, and cilantro until finely chopped. Add oil, harissa, lemon juice, and 1 tablespoon salt; process until a paste forms.
  • Using kitchen shears, remove backbone from chicken. Place, breast-side up, on a cutting board; press down with your hands to flatten. Spread half of paste under and over skin and over cavity side. Arrange onions in a large cast-iron skillet. Place chicken on top, skin-side up. Let stand at room temperature 1 hour, or refrigerate, uncovered, up to 8 hours. (Bring to room temperature before roasting.)
  • Preheat oven to 425 degrees. Arrange half of lemon rounds on chicken. Roast 25 minutes. Combine remaining paste and marmalade; brush chicken with mixture and top with remaining lemon rounds. Roast until a thermometer inserted in thickest part of thigh (not touching bone) reads 155 degrees, about 20 minutes more. Let stand 10 minutes; serve.

Steps:

  • Mix first 5 ingredients in small bowl. Place chicken breasts and thighs in 2-gallon resealable plastic bag. Pour oil mixture over; seal bag. Turn bag to coat chicken with marinade. Chill overnight.
  • Preheat oven to 475°F. Transfer chicken to rimmed baking sheet, shaking off marinade. Sprinkle chicken all over with flour. Heat 1 tablespoon peanut oil in large skillet over medium-high heat. Working in batches, add chicken to skillet. Cook until golden, adding more oil as needed, about 3 minutes per side. Return chicken to baking sheet, skin side up. Roast until cooked through, about 15 minutes. Serve with Harissa Sauce.

I found this recipe in a story from a California newspaper about a "Pacific Northwest cuisine" restaurant opening in Manhattan. I don't know what it has to to with any of the above places--it seems Middle Eastern or North African to me--but it sure is good!

2/3 cup extra virgin olive oil
1/4 cup capers, drained and smashed
6 garlic cloves, minced
1/3 cup fresh lemon juice (1 to 2 lemons)
3 tablespoons minced fresh rosemary
2 tablespoons paprika
1 tablespoon harissa (a spicy Moroccan seasoning blend)
1 teaspoon kosher salt
2 teaspoons fresh ground black pepper
6 boneless skinless chicken breast halves (about 3-1/2 pounds)
2 1/2 tablespoons all-purpose flour

Steps:

  • To make the marinade, combine the olive oil, capers, garlic, lemon juice, rosemary, paprika, harissa, salt and pepper in a small bowl.
  • Pound the chicken breasts to an even 1/2-inch thickness.
  • Place the chicken in a large Ziplock bag and add the marinade. Make sure the chicken is coated on all sides, then refrigerate for at least 3 hours and up to 6 hours.
  • Prepare your grill by scraping it, oiling it and heating it to high.
  • Remove the chicken from the marinade, reserving the liquid. Place the chicken breasts a few inches apart on the grill. If you are using a charcoal grill, place the chicken directly over the hot coals.
  • Grill the chicken for 4 to 6 minutes on each side, or until cooked through (the chicken should read 165°F on a meat thermometer inserted in the center). Remove the chicken from the heat, cover with foil and set aside.
  • To make the sauce, in a medium saucepan combine the remaining marinade with 1 cup water. Bring to a boil and cook for 1-2 minutes.
  • Whisk the flour into 1/3 cup cool water, then add to the marinade, stirring constantly. Bring to boil to thicken the sauce slightly. Remove from the heat and cool slightly.
  • Pour the sauce over the chicken and serve.
