HOT PEPPER PEACH SPREAD

Hot Pepper Peach Spread image

I love the combo of juicy summer peaches with zippy hot peppers. This spread is great on an English muffin with cream cheese as a sweet treat, but works equally well as a topping for grilled salmon. The jelly is quite colorful and also makes a nice holiday gift when the days of summer are long gone. Note: Adjust the amount and type of peppers to your own personal taste and desire for "heat."

1 cup tomatoes (peeld and mashed)
1/2 cup fresh hot pepper, seeded and chopped fine

Tips:

  • Select ripe and flavorful peaches: The quality of your peaches will greatly impact the taste of your spread. Choose peaches that are fragrant, slightly soft to the touch, and have a deep yellow or orange color.
  • Peel and dice the peaches: To easily peel the peaches, score an "X" at the bottom of each peach and immerse them in boiling water for about 30 seconds. The skin should then slip off effortlessly. Cut the peeled peaches into small dice to ensure even cooking.
  • Use a heavy-bottomed pot or pan: A heavy-bottomed pot or pan will help distribute heat evenly and prevent scorching. This is especially important when cooking the peach mixture over medium-high heat.
  • Cook the peach mixture until thickened: The peach mixture should be cooked until it has thickened and reduced in volume. This process can take anywhere from 20 to 30 minutes. Stir the mixture frequently to prevent it from sticking to the bottom of the pot.
  • Add sugar, lemon juice, and spices: Once the peach mixture has thickened, add sugar, lemon juice, and spices according to your taste preferences. Sugar will provide sweetness, lemon juice will balance the flavors, and spices like cinnamon, nutmeg, and ginger will add depth and warmth.
  • Simmer for an additional 5-10 minutes: After adding the sugar, lemon juice, and spices, bring the mixture back to a simmer for an additional 5-10 minutes. This will help the flavors meld together and create a cohesive spread.
  • Transfer the spread to sterilized jars: Before transferring the spread, sterilize glass jars and lids by boiling them in water for 10 minutes. This will help prevent spoilage and ensure the longevity of your spread.
  • Seal the jars and process in a boiling water bath: To ensure a proper seal and extend the shelf life of the spread, process the filled jars in a boiling water bath for the recommended amount of time specified in the recipe.

Conclusion:

Homemade peach spread is a delicious and versatile condiment that can be enjoyed in various ways. It can be spread on toast, muffins, or scones, used as a filling for pies and tarts, or even drizzled over ice cream or yogurt. With its sweet and tangy flavor, peach spread is a delightful addition to any breakfast, brunch, or dessert. Whether you're looking for a unique gift idea or simply want to enjoy the taste of summer all year round, making your own peach spread is a rewarding and satisfying experience.
