1/2 cup cubed fully cooked ham
1/4 cup chopped green onions
4 teaspoons minced fresh savory or 1 teaspoon dried savory
3/4 teaspoon salt
1/2 teaspoon pepper

1 to 1-1/2 cups chicken broth
1 roasting chicken (6 to 7 pounds)

Steps:

  • In a large bowl, combine cornbread crumbs and croutons. In a large skillet, saute the celery, mushrooms, red pepper, ham, onions, savory, salt and pepper in oil until vegetables are tender. 2 ounces ground andouille sausage, casings removed
1 tablespoon unsalted butter
1 ounce yellow onion, brunoise
1/2 ounce green bell peppers, brunoise
1/2 ounce celery, brunoise
1/4 ounce minced garlic (from 1 to 2 cloves)
1/4 ounce green onion, diced
4 ounces homemade or store-bought cornbread
1/2 tablespoon olive oil
One 8-ounce boneless skinless chicken breast,
1/2 ounce unsalted butter
1 ounce minced garlic (about 2 cloves)
1 cup heavy cream
1/2 ounce grated smoked Gouda
1/2 ounce grated Parmesan

Steps:

  • For the cornbread stuffing: Heat the andouille in a skillet or saute pan over low heat until the fat is rendered (it will separate and become liquid in the pan). Drain the liquid and set it aside in a small bowl to cool (you will use this to bind the stuffing). Set aside the andouille. In a separate saute pan, add the butter, onion, bell pepper, celery, garlic and green onion and sweat over medium heat until the color begins to come out, about 5 minutes. Set aside to cool.
  • Crumble the cornbread into a mixing bowl. Add the andouille and crumble it together with the cornbread until large crumbs form. Add the reserved rendered fat and the onion mixture and gently fold them into the cornbread mixture. Set aside.
  • For the chicken: Grease a baking sheet with the oil. Grill the chicken in a grill pan or on an outdoor grill on medium-high heat until cooked throughout, about 8 minutes per side.
  • Preheat the broiler to high. Scoop enough of the cornbread stuffing to cover the breast and press it down onto the top of the chicken. Place the chicken on the prepared baking sheet and broil until the stuffing browns, 4 to 5 minutes.
  • For the smoked Gouda sauce: Melt the butter in a skillet over medium heat. Add the garlic and cook to just release the flavor, no more than 2 minutes. Add the heavy cream and bring to a boil, then add the Gouda and Parmesan and stir to thicken the sauce. 5 boneless skinless chicken breast halves

3 tablespoons chopped walnuts

  • Preheat oven to 450 degrees F. Spray a 9x13-inch baking pan with cooking spray. Prepare rice as directed on the package.

3 lbs pork chops (6-8 thick chops)
3 kaiser rolls, day old
4 ounces dried currants
1 bunch parsley
2 cups sour cream
2 tablespoons flour
2 apples (sour variety like granny smith)
4 ounces pitted prunes
1 egg
1 teaspoon ground cardamom
1 tablespoon butter
salt and pepper
3 -5 sprigs fresh parsley (to garnish) (optional)

Steps:

  • Slice each pork chop open so that it forms a pouch.
  • Rub salt and pepper generously into the meat.
  • Cut the rolls into small cubes and brown them in butter; put the browned cubes in a bowl.
  • Add raisins, chopped apples, quartered prunes, finely chopped parsley, and the egg to the croutons and mix well.
  • Add cardamom, 1/2 tsp salt and 1/2 tsp pepper and stir.
  • Divide the stuffing among the pork chops, filling each pouch.

  • Melt the butter in a large skillet and sear the stuffed chops over high heat until nicely browned on both sides.
  • Add 1 1/2 cups of water to the pan, reduce the heat to low, cover and let simmer for 1 1/2 to 1 3/4 hours.
  • Remove the chops to a heated platter.
  • If pan juices have boiled down, add 1/2 cup of hot water to the pan and deglaze the bottom.
  • If pan juices have not boiled down, turn heat to medium high and reduce until only about 1/2 cup of liquid remains.
  • Stir in the sour cream and flour and thicken the sauce over medium heat for 5- 10 minutes.
  • Taste the sauce and add salt and pepper if necessary.
  • Spoon a generous amount of sauce onto each serving plate and top with a stuffed chop.
  • Garnish with a sprig of fresh parsley, if desired.
