1/3 cup heavy whipping cream
1-1/8 teaspoons dill weed, divided
4 cups frozen shredded hash brown potatoes, thawed
2 large eggs, beaten
2 tablespoons minced chives
1/4 teaspoon salt
1 package (3 to 4 ounces) smoked salmon or lox

Steps:

  • Beat heavy whipping cream and 1 teaspoon dill on high until stiff peaks form. Cover and refrigerate., Preheat griddle over medium heat. Stir together potatoes, eggs, chives and salt until well combined. Grease griddle. Drop potato mixture by heaping 1/2 cupfuls onto griddle; flatten to 1/2 inch thick. Cook until bottoms are golden brown, about 10 minutes. Turn; cook until second sides are golden brown. Keep warm., To serve, place salmon slices on pancakes. 1 egg
1/2 cup fat-free (skim) milk
1 container (6 oz) Greek Fat Free plain yogurt
3/4 cup Gold Medal™ whole wheat flour
5 russet potatoes (about 1 1/2 lb), peeled
1 small onion
4 oz smoked salmon, chopped
2 tablespoons vegetable oil
1 tablespoon fat-free (skim) milk
1 tablespoon chopped fresh dill weed
Dash pepper

Steps:

  • In large bowl, beat egg, 1/2 cup milk and 2 tablespoons of the yogurt. Stir in flour to make a thin batter.
  • Shred potatoes and onion into batter. Stir in salmon.
  • In 10- to 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Using 1/4-cup measuring cup, scoop batter into skillet to make each pancake. Gently press down on top of each pancake with pancake turner to flatten. Cook 2 minutes on each side or until pancakes are golden brown and crispy. Add remaining tablespoon oil as needed.
  • To make sauce, stir together remaining yogurt, 1 tablespoon milk and the dill. Season to taste with black pepper. Serve sauce with pancakes.

2 tablespoons all-purpose flour
2 eggs, beaten
3 tablespoons butter, melted
1 1/2 teaspoons water

2 russet potatoes (about 1 pound), peeled
Kosher salt and freshly ground black pepper
1/4 cup clarified butter
1/2 cup creme fraiche or sour cream
1/4 cup fresh chives, chopped
3 tablespoons buttermilk
1 tablespoon caper juice
1 teaspoon honey
Zest of 1 lemon
8 to 10 slices smoked salmon or gravlax
1/4 cup fresh dill fronds

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a colander or strainer with a clean kitchen towel or cheesecloth and place over a large bowl.
  • On the large holes of a box grater, grate the onion and potatoes into the lined strainer. Wrap the kitchen towel around the grated potatoes and onions and squeeze out as much water as possible. Discard the water. Open the towel and spread out the potatoes and onion. Sprinkle generously with salt and pepper.
  • In a 10-inch oven-safe nonstick saute pan set over medium heat, melt the clarified butter. Press the potato and onion mixture into the pan, so that the layer is about 1/2-inch thick. Cook until the bottom is brown and crispy, about 5 minutes. Carefully and gently flip the hash brown onto the other side and cook for an additional 5 minutes. For an extra-crispy hash brown, transfer the pan to the oven for 8 to 10 minutes.

Dill Creme Fraiche, recipe follows
3 ounces fresh salmon roe
3 tablespoons chopped fresh dill
1 cup creme fraiche
2 tablespoons chopped fresh dill
1 teaspoon lemon juice
Salt and freshly ground black pepper

  • In the bowl of a food processor, add the flour, potatoes, eggs, and shallots. Pulse until everything is blended but the consistency of the batter is chunky. Season, to taste, with salt and pepper.
