Scatter remaining shallots around potatoes.
- Tightly cover dish with foil and bake until potatoes are tender, about 40 minutes, flipping halfway through.

Steps:
- Preheat oven to 200C (180C fan forced).
- Line a large baking tray with baking paper.
- To make each potato sit flat, trim and piece from each (to allow it to sit flat) and using a small sharp knife, cut thin slits in top of potatoes at 3mm intervals, being careful not to cut all the way through (I put a wooden spoon either side of the potato to prevent this happening).
- Place the potatoes, cut side up, on prepared tray and brush with oil and sprinkle with salt, sage and parmesan and bake for 1 hour or until golden and tender.
Tips:
- Use a sharp knife to make thin, even slices in the potatoes. This will help them cook evenly and become crispy. - If you don't have a mandoline, you can use a sharp knife to make the slices. Just be sure to be careful and make sure the slices are even. - You can use any type of oil you like for this recipe. Olive oil, avocado oil, and grapeseed oil are all good options. - Be sure to season the potatoes generously with salt and pepper. This will help them develop a delicious flavor. - You can add other herbs and spices to the potatoes, such as rosemary, thyme, or garlic powder. - If you want the potatoes to be extra crispy, you can brush them with melted butter or olive oil before baking. - Serve the potatoes immediately after they are cooked. They are best when they are hot and crispy. Conclusion:
