Steps:
- Preheat a grill or large grill pan to high for about 5 minutes.
- Form the beef into four round patties, about 1/4 pound each. Season the patties generously with salt and pepper.
- Lightly oil the grates or grill pan with clean paper towels. Grill the patties and pineapple rings, brushing them with some of the teriyaki sauce. Flip the pineapple rings when grill marks form, after about 1 minute and brush with more teriyaki sauce. Grill the other side of the pineapple until grill marks form, about 1 more minute, then remove from the heat and set aside.
- Grill the patties until you get nice deep char marks, about 3 minutes. Flip and brush with more teriyaki sauce, then top each patty with a cheese slice. When you hit your desired doneness, remove the patties from the grill and let rest. Toast the rolls for 10 seconds on each side then remove to a plate.
- To assemble each slider, place a bottom bun on a plate. Top with a cheese patty then a pineapple ring. Top with onion, tomato and lettuce. If you are adding ketchup, mayo or mustard, this is the time. Top with 1/4 cup of the potato chips, then gently press the top bun on it.

Steps:
- Drain pineapple juice into a small bowl. Add ponzu and sugar to the pineapple juice; stir to dissolve sugar. Refrigerate pineapple rings and 1/3 cup of the juice mixture.
- Transfer remaining juice mixture to a resealable zip-top bag. Add steak and seal. Refrigerate for 8 hours to overnight.
- Peel outer layer of onion. Slice onion as thinly as possible. Thinly slice jalapeno into rounds, removing ribs and seeds for less heat. Combine 1/4 of the onion slices, jalapeno, lime juice, sugar, and 1 pinch salt in a bowl. Set aside to quick-pickle, stirring occasionally, until ready to serve.
- Mix sour cream and Sriracha sauce together in a bowl for the Sriracha cream. Set aside.
- Heat 1 1/2 teaspoons oil in a large pan over medium-high heat. Add pineapple rings and cook, stirring occasionally, until lightly caramelized, 3 to 4 minutes. Remove from the pan and set aside. Add remaining onion and oil to the pan; season with salt and pepper. Cook and stir until softened, 4 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Drain sirloin from marinade. Add to the pan and season with salt and pepper. Cook until browned, 4 to 5 minutes. Carefully add reserved pineapple juice mixture to the pan. Cook and stir until liquid has mostly evaporated and beef is coated in sauce, 1 to 2 minutes. Remove from heat and stir in pickling liquid from onion and jalapeno. Taste and season with salt and pepper.
- Assemble sliders by adding sirloin steak to each bun. Top with jalapeno slaw, Sriracha cream, and caramelized pineapple.

Tips:
- Use fresh ingredients for the best flavor. This includes using ripe pineapple, fresh cilantro, and high-quality beef.
- Don't overcook the beef. The beef should be cooked to medium-rare or medium so that it remains tender and juicy.
- Make sure the pineapple slaw is well-drained. This will prevent the slaw from making the sliders soggy.
- Serve the sliders immediately. This will ensure that the buns are soft and fluffy and the beef is still hot and juicy.
Conclusion:
These Hawaiian beef sliders with pineapple slaw are a delicious and easy-to-make appetizer or main course. They are perfect for parties or potlucks, and they are sure to be a hit with everyone who tries them. So next time you're looking for a new and exciting recipe, give these sliders a try.
