This is an impressive bread that is easy enough for beginners to make. It also contains my favorite flavor combo...toasted hazelnuts and chocolate! This loaf freezes well. Prep time does not include rising time.

Number Of Ingredients 12

1 cup milk
1 teaspoon granulated sugar
1 (1 tablespoon) package active dry yeast
3 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup shortening, softened
1/2 lb hazelnuts
6 ounces chocolate chips
1/2 cup granulated sugar
1 egg, separated
1/4 cup water
1/16 teaspoon almond extract

Steps:

  • To make bread dough: In small saucepan, heat milk to lukewarm.
  • Stir in yeast and 1 tsp granulated sugar.
  • Cover and let stand for 10 minutes or until foamy and double in volume.
  • Maenwhile, in large bowl, stir together 1 cup flour, 1/4 cup sugar and softened shortening.
  • Stir yeast mixture with a fork and add to flour mixture.
  • Gradually beat in remaining flour to make a soft dough.
  • Turn out onto a lightly floured board and knead dough for about 10 minutes or until dough is smooth and elastic.
  • Shape into a ball and place in a clean, greased bowl.
  • Cover with a tea towel and let rise in a warm place for about 1 hour or until double in bulk.
  • To make filling: Place hazelnuts in a frying pan and toast on medium-high heat, shaking pan constantly, until skins start to loosen and nuts turn light brown.
  • Remove from heat and place in a tea towel.
  • Rub vigorously to remove skins, being careful not to burn yourself.
  • Let cool.
  • Grind toasted hazelnuts in a food processor (you should have about 1 1/2 cups) and then place into a medium bowl.
  • Grind chocolate chips in food processor.
  • Add to ground nuts.
  • Add sugar, egg white, water and almond extract to bowl.
  • Beat egg yolk with a fork and add half of it to the nut mixture.
  • Mix well.
  • To assemble: Punch down risen dough and let rest on floured surface for about 10 minutes.
  • Roll out into a 18 by 12 inch rectangle.
  • Spread filling evenly over dough, leaving a 1/2 inch border.
  • Starting at long side, roll up tightly, jelly-roll fashion.
  • Pinch ends closed and form into a slight horseshoe shape.
  • Place seam side down on large, greased baking sheet.
  • Cover with a towel and let rise in a warm place for about 1 hour or until double in bulk.
  • Using a very sharp knife, cut diagonal slits on top of bread, spacing them about 2 inches apart.
  • Bake in preheated 400 degree oven for 30 to 35 minutes or until loaf is golden brown and bread sounds hollow when tapped (if bread is browning too quickly, cover with tin foil).

1 cup lukewarm milk, or more as needed
2 (.25 ounce) packages active dry yeast
5 cups whole wheat flour
2 ½ cups all-purpose flour
⅔ cup white sugar
¼ teaspoon salt
2 ¼ sticks unsalted butter, softened and cubed
4 large egg yolks, lightly beaten
4 ½ cups finely ground hazelnuts
½ cup white sugar
3 tablespoons rum
1 tablespoon unsweetened cocoa powder
1 pinch ground cinnamon
1 pinch ground cloves
½ cup milk
3 large egg yolks, lightly beaten
3 large egg whites
2 large Egg, yolk, raw, fresh
2 tablespoons milk for brushing
coarse sugar for sprinkling as needed

Steps:

  • Combine 1 cup milk and yeast in a small bowl and let stand for 10 minutes until frothy.
  • Mix whole wheat flour and all-purpose flour with sugar and salt in a large bowl or the bowl of your stand mixer. Add yeast mixture, butter, and egg yolks. Knead into a smooth, elastic dough using the kneading attachment until the dough detaches from the sides of the bowl, about 5 minutes. If the mixture seems dry, add more milk, 1 tablespoon at a time. Cover and let rise for 2 hours in a warm place.
  • Mix hazelnuts, sugar, rum, cocoa powder, cinnamon, and cloves in a large bowl for the filling. Add 1/2 cup milk and stir until evenly moistened.
  • Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Fold stiff egg whites into the hazelnut mixture.

Twist each strip around itself 3 to 4 times. Place the strips on the prepared baking sheets, leaving 2 inches of space between them.
  • Proceed the same way with the remaining dough.
  • Cover the twists with clean dish towels and let them proof in a warm place until visibly risen, about 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat 2 egg yolks with 2 tablespoons milk in a small bowl. Brush the twists with egg wash and sprinkle with coarse sugar.

Roasted Hazelnut Raisin Whole Grain Wheat Bread - Direct Method image

This is a short-cut method to my all time favorite bread. The loaves are light and very flavorful. Do not skip the autolzye or resting period or kneading time will greatly increase. This is a combination of methods and recipes by Jeffery Hamelman and Peter Reinhart.

5 cups whole wheat flour (605 g, I use fresh ground wheat berries)
2 cups water (443 g room temperature)
2 teaspoons salt (11.4 g table salt or fine sea salt)
2 1/2 teaspoons instant yeast (8.5 g)
1 1/2 tablespoons honey (18.9 g)
1 tablespoon butter (softened - 14 g)
1 cup hazelnuts (113 g roughly roasted & roughly crushed)
1 cup raisins (113 g)

Steps:

  • Mix the flour and water either by hand or mixer until all of the flour is wetted. Cover and let that sit at room temperature for 1 hour.
  • Roast hazelnuts at 375F for 14 minutes. Cool and remove skins by rubbing the hazelnuts between your hands. Crush the nuts roughly or leave whole.
  • Add salt and yeast, butter and honey and knead for 5 minutes.
  • Add nuts and raisins and knead for about 3 more minutes to mix them in uniformly.
  • Remove dough and place in a straight-sided clear container noting the level of the dough.
  • Cover with oiled plastic wrap and let rise until doubled in volume. After 20 minutes, remove the dough and stretch and fold it as you would a letter from top to bottom and side to side. Return to the container.
  • Divide the dough into 2 pieces and roll each piece until the length is about 8 inches each. Place each into 8" x 4" loaf pans sprayed with oil.
  • Preheat oven to 375°F.
  • Cover the pans with oiled plastic wrap and let rise until risen 1 1/2 times the volume or 1/2 inch above the pan tops.
  • Bake for 15 minutes and rotate the loaves for even baking.
  • After 35 to 45 minutes (total) check the temperature. Remove when the loaves are 195 F to 205°F.
  • Tip the loaves out onto racks and let cool to room temperature.
