HEALTHIER EGGPLANT PARMESAN II
I like this recipe because it is not fried and very tasty. I like to make it healthier by using whole wheat breadcrumbs and reducing the amount of fat. Also, by using mostly egg-whites instead of whole eggs I am able to reduce the cholesterol level.

HEALTHIER EGGPLANT PARMESAN FOR TWO
Adapted from a Bon Appetit recipe, this cooking method is healthier, hearty, no-frying, and low mess. Pretty darned tasty, too. I don't bother to make marinara sauce, but use Victoria brand; it's pricy but tastes wonderful. A good pizza sauce like Muir Glen would work well, too. Multiplies easily for more servings. Eggplants can be pre-cooked 1 day ahead, kept covered, and chill. Entire dish can be assembled 4 hours ahead and refrigerated until baking.

Steps:
- Preheat oven to 400°. Using a vegetable peeler, remove skin from rounded side of each eggplant half, leaving a 1" strip of skin around the cut edges; this will hold the eggplant together during cooking. Place eggplant, 2 tablespoons oil in an eight or nine inch baking dish. Turn eggplant to coat with oil; season with salt and pepper and place cut side down. Cover baking dish tightly with foil and bake until eggplants are very soft, 40-45 minutes.
- Toss breadcrumbs and remaining 2 tablespoons oil in a medium bowl. Turn eggplant halves cut side up in the baking dish. Top eggplant halves with tomato sauce and mozzarella, then sprinkle with breadcrumbs and Parmesan. Bake until mozzarella is bubbling and breadcrumbs are golden, 25-30 minutes.

Tips:
- Choose the right eggplant: Look for firm, unblemished eggplants that are about the same size. Smaller eggplants tend to be less bitter.
- Slice the eggplant evenly: This will help them cook evenly.
- Salt the eggplant slices: This will help to draw out the bitterness.
- Rinse the eggplant slices: This will remove the excess salt.
- Dredge the eggplant slices in flour: This will help them to brown evenly.
- Use a good quality marinara sauce: This is the key to a flavorful dish.
- Don't overcrowd the pan: This will prevent the eggplant slices from cooking evenly.
- Cook the eggplant slices until they are golden brown: This will ensure that they are cooked through.
- Layer the eggplant slices with the marinara sauce and cheese: Be sure to use plenty of cheese!
- Bake the eggplant parmesan until it is bubbly and golden brown: This will take about 20 minutes.
- Let the eggplant parmesan cool for a few minutes before serving: This will help it to set.
Conclusion:
Eggplant parmesan is a delicious and versatile dish that can be served as a main course or a side dish. It's perfect for a weeknight meal or a special occasion. With a few simple tips, you can make a delicious and impressive eggplant parmesan that your family and friends will love.
