EVEN HEALTHIER MOM'S ZUCCHINI BREAD (NO NUTS)

Even Healthier Mom's Zucchini Bread (No Nuts) image

Mom's original recipe is great, but I wanted something I could a) feel a bit better about feeding my 2-year-old, and b) feel better about eating half a loaf of every day. This is my spin. The best thing about it: take out the zucchini and add something you like instead.

MOM'S ZUCCHINI BREAD

Mom's Zucchini Bread image

I've tried a lot of zucchini bread over the years, but my mother's recipe is still my favourite one ... lemon, orange, ginger and nutmeg give it a nice light flavour. Start checking for doneness at 45 minutes, don't let it overbake! :)

Categories     Quick Breads

Time 1h5m

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 13

1 cup sugar
2/3 cup vegetable oil
2 eggs
3 tablespoons freshly-grated lemon peel
1 teaspoon orange extract
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/2 cup chopped walnuts or 1/2 cup pecans
1 cup grated zucchini, heaping, skins on
1 1/2 cups flour

Steps:

  • In mixer, beat together all ingredients except zucchini, nuts, and flour. In grating the lemon peel, I find it much faster & easier to just use the small side of a standard cheese grater than to use a lemon zester. The peel from about half a medium-sized lemon should do fine.
  • Mix well, then add in nuts and grated zucchini. Slowly mix in flour.
  • Bake in greased 9" X 5" loaf pan, at 350 degrees for 45 - 50 minutes (until test knife comes out clean or top of loaf springs back when pressed with finger; do not overbake).

MOM'S ZUCCHINI BREAD

My mom would always put a bumper crop of zucchini to use with this wonderful quick bread. It can be spiced or sweet, a loaf or a Bundt cake. Mom preferred to keep the spices and chocolate separate, but I like them combined. Either way, this unusual family favorite is sure to please your family and guests just as it has mine.

Buckwheat flour is very nutritious: it contains the 8 amino acids, is high in lysine, and is a good source of B vitamins and iron - and it's gluten-free!

Tips:

  • Use a combination of flours. All-purpose flour provides structure, while whole wheat flour or oat flour adds fiber and nutrients.
  • Add moisture with zucchini. Zucchini is packed with moisture, which helps keep the bread moist and tender.
  • Use less sugar. This recipe uses only 1/2 cup of sugar, which is less than most zucchini bread recipes.
  • Add spices for flavor. Cinnamon, nutmeg, and ginger are classic zucchini bread spices that add warmth and flavor.
  • Don't overmix the batter. Overmixing can make the bread tough.
  • Bake the bread until a toothpick inserted into the center comes out clean. This usually takes about 50-60 minutes.

Conclusion:

This zucchini bread recipe is a healthier take on a classic. It's made with a combination of flours, less sugar, and plenty of zucchini. The result is a moist, tender, and flavorful bread that's perfect for breakfast, lunch, or a snack. So next time you have a glut of zucchini, give this recipe a try. You won't be disappointed.
