I've adapted this from a Rosemary Stanton recipe putting my own little twist on things. This loaf is a bit healthier than many regular loaf and cake recipes. It's free of lactose, butter and eggs and is a great snack when you're on the move or looking for a healthier alternative to satisfy those indulgent cravings!

Number Of Ingredients 8

1 cup chopped dates
1/4 cup honey
1 teaspoon bicarbonate of soda
1 cup apple juice
2 grated granny smith apples, grated, excess liquid squeezed out and reserved (any other cooking apple will suffice)
1/2 cup chopped walnuts
1 1/2 cups whole wheat flour
2 teaspoons baking powder

Steps:

  • In a small saucepan heat the dates, honey, bicarbonate soda, apple juice and the reserved apple juice. Bring to the boil whilst stirring then allow to simmer for 2-3 minutes. Remove from heat and allow to cool slightly.
  • In a large mixing bowl mix togther the apple, walnuts, flour and baking powder. Make a little well in the centre and pour in the contents of the saucepan. Mix well until all combined.
  • Pour the mixture into a lined 14 x 21 loaf tin and bake in a moderate oven for 40 minutes, or until the centre is cooked. Allow to cool before cutting into slices.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup apples - peeled, cored and shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
  • Mix together flour, baking powder, soda, salt and nuts.
  • In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.
  • Bake for 50 to 60 minutes, or until an inserted toothpick comes out clean. Let stand 10 minutes, then remove from pan. Place on a rack to cool.

1/2 cup butter or 1/2 cup margarine, soften
1 cup sugar
2 eggs
1 teaspoon vanilla
1/4 teaspoon cinnamon (optional)
1 cup apple, grated roughly, unpeeled, packed (I used small diced apples, packed)
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts, chopped

Steps:

  • In a bowl, put butter, sugar and 1 egg. Beat to obtain a creamy mixture. Add the second egg and beat well. Add vanilla and cinnamon if using. Stir and add apples.
  • In another bowl, mix flour, baking powder, baking soda, salt and walnuts. Pour in the dough. Stir only to wet. Put in a greased loaf pan of 9 x 5 x 3 inch.
  • Cook in a preheated oven of 350 F for 50 to 60 minutes or until toothpick inserted comes out clean. Let rest 10 minutes then remove from the pan. Put on a grill to cool down and wrap it.

Easy moist apple cake with cinnamon and ginger

115g of Self Raising Flour
115g butter or marg
100g light brown sugar
2 eggs
1 peeled apple chopped into small pieces
2 tsp of ginger
1tsp of cinnamon
Optional 4 square of chocolate melted to drizzle on the top

Steps:

  • Preheat the oven to 150. Cream the butter with the sugar with an electric whisk for at least 2 mins
  • Whisk in the 2 eggs
  • Sieve the flour and cinnamon and ginger into the mixture and fold in. Add the chopped apple by folding in too
  • Place in a greased or silicon loaf tin and bake for 40 mins. Put a skewer in the middle of cake to see if it comes out clean. If not cooked give it 5 mins longer
  • After cooled for 10 mins place cake on a wire rack. When completely cooled drizzle melted chocolate on top if desired

3 ripe bananas, mashed

1 teaspoon all-purpose flour, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking pan.
  • Combine oats, 1 cup flour, brown sugar, cinnamon, salt, and baking powder together in a bowl.
