HEALTHY LOW-FAT BANANA ZUCCHINI BREAD

Healthy Low-Fat Banana Zucchini Bread image

This bread is a combination of zucchini and banana bread, and it is a wonderful way to use up old bananas and dip into that summer harvest of zucchini. The bread tastes more like banana bread than zucchini bread, but it has the added nutritional benefits of vegetables. This bread is lower in fat that the standard banana/zucchini bread because applesauce replaces some of the oil in the recipe. Still using some oil, however, will prevent the bread from getting rubbery. Experiment by using pumpkin instead of bananas during the autumn months or by adding walnuts and dates! This recipe makes 2 loaves. Enjoy!

ZUCCHINI BANANA BREAD

Zucchini Banana Bread image

The BEST healthy Zucchini Banana Bread. Super easy, moist, and lightly spiced with cinnamon. Made from wholesome ingredients and so delicious!

Provided by Erin Clarke / Well Plated

Categories     Breakfast

Time 1h30m

Number Of Ingredients 14

2 cups shredded, unpeeled zucchini (about 2 small zucchini)
1 cup mashed ripe banana (about 2 medium bananas)
1/3 cup honey or pure maple syrup
1/4 cup coconut sugar (or light or dark brown sugar)
1/4 cup coconut oil (melted and cooled to room temperature (or use very light olive oil or canola oil))
1 1/2 teaspoons pure vanilla extract
2 large eggs (at room temperature)
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/2 teaspoon baking powder (I recommend aluminum free)
1/2 teaspoon kosher salt
2 cups white whole wheat flour
1/3 cup chopped toasted nuts, such as pecans or walnuts, or chocolate chips (optional)

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9x5-inch loaf pan with nonstick spray. Line with parchment paper so that the paper overhangs two sides like handles, then lightly grease again.
  • Thoroughly squeeze the shredded zucchini with a paper towel to remove as much excess water as possible. Repeat as needed.
  • In the bowl of a standing mixer or a large mixing bowl, beat the mashed banana with the honey, coconut sugar, coconut oil, and vanilla extract until smooth. (You can also use a whisk and some elbow grease and mix the batter by hand.) Add the eggs (make sure they are room temperature or the coconut oil may resolidify), then mix again until smoothly combined. If the coconut oil does resolidify, microwave the bowl in 10-second bursts, just until the coconut oil reliquifies.
  • Sprinkle the cinnamon, nutmeg, baking soda, baking powder, and salt over the top of the batter. Mix to combine. Sprinkle the flour evenly over the top, then mix on very low speed, just until the flour disappears. By hand, fold in the zucchini and the nuts or chocolate chips (if using), stopping as soon as it's mostly evenly blended. Do not overmix. The batter will be thick.
  • Scrape the batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes, until a toothpick or thin, sharp knife such as a paring knife inserted in the center comes out clean two tests in a row. (You want to test for a clean knife more than once, as moist quick breads can be tricky to tell; if in doubt, take the bread's temperature on an instant-read thermometer. It's done when it reaches 195 degrees F.). I like to check the bread at the 30-minute mark and tent it with aluminum foil if the bread is browning too quickly at the corners, then continue baking as directed.
  • Once the bread is baked, place the pan on a wire rack and let cool for 15 minutes. Lift the bread from the pan using the parchment paper, and place the loaf on the rack to finish cooling completely. Slice and enjoy!

Banana Nut Bread: A Healthy and Delicious Recipe

This article provides a recipe for a healthier version of a classic treat: Banana Nut Bread. The recipe uses whole-wheat and almond flours instead of refined white, as well as almond milk and eggs for some added protein and healthy fats. It's also reduced in added sugar and calls for more nutritious ingredients like Greek yogurt and mashed bananas.

The article includes tips for making sure you get the best results from your loaf and also ideas for swapping in different kinds of ingredients, such as other types of flours or sugar-free sweetener in place of regular. It also includes a nutritional analysis so that you can keep track of what you're eating when you enjoy a piece of this wholesome treat. Here are some tips and conclusion for this recipe based on the article provided.

Handy Baking Hacks and a Wrap-Up

  • Prep work is key: Make sure all of your ingredients are properly measured and prepared before starting to bake so that you're not scrambling to get things ready last-second.
  • Use ripe bananas: Ripened bananas have more pronounced flavors and a better texture when baked into breads and other baked goods. If you don't have ripe bananas on hand, feel free to ripen them quickly by popping them in the freezer for an hour or so, then moving them to the fridge for a day or two.
  • Don't over-knead: Overworked gluten can give you a tough loaf, rather than a soft and pillowy one. Work the ingredients together until everything is just combined, then let the mixture rest for 5 to 10 minutes before shaping.
  • Check for doneness: Insert a toothpick or skewer into the center of the loaf to check for donness. When you pull it out it should have just a few crumbs attached, signaling that your bread is done. If it comes out covered in gooey batter, you'll need to let it bake for longer.

In summary, this Banana Nut Bread is a simple and wholesome recipe that you can feel good about eating. It is a delicious and nutritious treat that's perfect for breakfast, lunch, or a sweet afternoon indulgence. With its moist texture, rich flavors, and healthier ingredients, this loaf is sure to be a hit with people of all ages. Feel free to get creative with it by trying out different flours or add-ins and customizing the loaf to fit your tastes.
