3/4 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup sugar
1 large banana
1 tablespoon ground flax seeds
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup nonfat plain yogurt
1 large egg
2 tablespoons frozen orange juice concentrate
1 tablespoon canola oil
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 400.
  • Grease and flour 9 by 5 inch loaf pan.
  • In a large bowl, combine flours, sugar, flaxseed, baking powder, and baking soda.
  • in a small bowl, combine yogurt, egg, oil, vanilla, and orange juice concentrate.
  • Mash banana and add to wet mixture, combining well.
  • add wet ingrediants to dry (Dont over-mix!).
  • pour batter into loaf pan.
  • bake for 35 mins or until cooked through.
  • upon choice, you can spread some additional orange juice concentrate on top of cooling loaf. (after you take it out of the oven).

¾ cup SPLENDA® Sugar Blend
¾ cup flax seed meal
5 ripe bananas, mashed
¼ cup skim milk
¼ cup low-fat sour cream
2 teaspoons egg whites
2 cups whole wheat flour

½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and a 9x5 inch loaf pan.

⅔ cup white sugar
¼ cup margarine, softened
2 eggs
1 cup mashed bananas
¼ cup water
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
  • In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
  • Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
  • Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. 1 cup brown sugar
4 -6 bananas (dark)
4 cups whole wheat flour (pastry flour is fine)
1 1/2 cups ground flax seeds
1 teaspoon salt
2 eggs (or egg substitute)
1/2 cup oil
2 teaspoons baking soda
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350°F.
  • Spray 2 loaf pans with non-stick spray.
  • Mash bananas.
  • Combine sugar, oil and egg--mixing until creamy.
  • Blend in mashed bananas.
  • In a separate bowl, combine whole wheat flour, ground flax seed, salt, baking soda. (Add the nuts to the dry ingredients at this point). Combine wet and dry ingredients, but do not overmix.
