HEALTHY & FLAVORFUL MUSHROOM BARLEY SOUP RECIPE RECIPE - (4.6/5)

Healthy & Flavorful Mushroom Barley Soup Recipe Recipe - (4.6/5) image

Provided by Foodiewife

Number Of Ingredients 12

2 tablespoons extra-virgin olive oil
1 onion, minced
1 pound cremini mushrooms, brushed, cleaned, stemmed and quartered)
1 pound Portobello mushrooms (I used Shiitaki mushrooms, instead)
1 ounce dried porcini mushrooms, rinsed and minced
Salt and pepper, to taste
2 carrots, peeled and cut into 1/2-inch pieces (I chopped them in my food processor as a short cut)
2 garlic cloves, minced
2 teaspoons minced fresh thyme (or 1/2 teaspoon dried)
6 cups low-sodium chicken broth
1 cup water
1/2 cup pearl barley

Steps:

  • Heat the oil in a large Duch oven, over medium high heat until shimmering. Add the onion and cook until softened, about 5 minutes. Sir in the cremini, shitaki (or Portobello) and porcini mushrooms and a pinch of salt. Cover and cook until the mushrooms are very wet, about 5 minutes. Uncover and continue to cook until the mushrooms are dry and browned, 5 to 10 minutes. Stir in the carrots, garlic, and thyme and cook until fragrant, about 30 seconds. Stir in the broth, water*, and barley bring to a simmer. Partially cover, reduce the heat to medium-low and cook until the barley is tender, about 50 minutes. *In my pressure cooker, I added the water and pressure cooked the barley on HIGH for 20 minutes, then allowed a natural release-- while I was preparing the soup. This shaved off 30 minutes of simmering time! Serve with salt & pepper, to taste, and serve. Note: I liked adding a squeeze of a fresh lemon wedge into the soup, which adds a nice balance of acidity and brightness.

GRANDPA'S BEEF, MUSHROOM, AND BARLEY SOUP

Grandpa's Beef, Mushroom, and Barley Soup image

I miss my Grandparents dearly. Grandpa loved to cook while Grandma knitted on the sofa. This helps brings them back to me. This recipe was one of my favorites growing up. It's an old-fashioned, slow-cooking, lick-the-bowl, stick-to-your-ribs type of soup. The family loves it. It's traditional at holiday time with a nice slice of rye bread to dip in it.

MUSHROOM-BARLEY SOUP

Mushroom-Barley Soup image

Soup made without meat or meat broth can be insipid. That's why most people think pea soup needs ham and mushroom-barley soup needs beef. But it's possible to make a satisfying, even hearty, vegetarian soup if you choose your ingredients carefully and extract every bit of flavor from them. Enter this mushroom-barley soup, a vegetarian dish with real body, texture and depth of flavor. The key ingredient here is dried porcini, which can be reconstituted in hot water in less than 10 minutes, giving you the best-tasting mushrooms you can find outside the woods and an intensely flavored broth that rivals beef stock. Don't forget to toast the barley while really browning the mushrooms and carrots - it lends a deep warmth.

SLOW-COOKER DIJON CHICKEN WITH BARLEY AND MUSHROOMS

Slow-Cooker Dijon Chicken With Barley and Mushrooms image

This glossy, risottolike dish is inspired by the French bistro classic of chicken in tarragon-mustard sauce. Here, those flavors are transformed into a whole-grain, one-pot weeknight meal: The barley, mushrooms and chicken cook together first, then just before eating, finish with a bag of frozen peas and a tangy mixture of crème fraîche (or sour cream) and Dijon. Make the dish vegetarian by omitting the chicken and using your favorite vegetable broth, but add about ½ cup more liquid, to substitute for the chicken juices.

Provided by Sarah DiGregorio

Categories     dinner, grains and rice, poultry, main course

Time 3h5m

Yield 6 to 8 servings

Number Of Ingredients 17

1 1/2 cups pearled barley
1 pound sliced cremini mushrooms
1 pound boneless, skinless chicken thighs
4 cups chicken broth
1/4 cup lemon juice (from about 1 large lemon)
1/4 cup dry white wine
6 garlic cloves, smashed and chopped
4 thyme sprigs, leaves picked (about 2 teaspoons), or 1 teaspoon of dried thyme
2 teaspoons coarse kosher salt
1 teaspoon onion powder
1/2 teaspoon red-pepper flakes
Black pepper
1 (10-ounce) bag frozen peas
1/4 cup crème fraîche or sour cream
2 heaping tablespoons smooth Dijon mustard, plus more to taste
1/3 to ½ cup chopped fresh tarragon or dill, to taste
Grated Parmesan, for serving

Steps:

  • In a 6- to 8-quart slow cooker, combine the barley, mushrooms, chicken, chicken broth, lemon juice, white wine, garlic, thyme, salt, onion powder, red-pepper flakes and several generous grinds of black pepper. Stir to combine, then cook for 3 hours on high.
  • At first it will seem like there is too much liquid, but the dish will thicken as it cools, and as you stir. Stir in the frozen peas and let them heat through, about 2 minutes.
  • In a small bowl, stir together the crème fraîche and mustard, then fold it into the barley mixture. The chicken thighs should be falling apart; break them into coarse chunks with a spatula. Taste and add more mustard for a stronger flavor, if desired. Stir in the chopped tarragon and serve. Pass Parmesan at the table for topping.
